And we reworked the classic recipe to make it vegan and healthier. Let us show you how it’s done!
Simple and comforting, Scotch broth is a traditional soup that originated in Scotland. It’s now so popular that you can even find the ready-made canned version in the supermarket. The original recipe includes winter vegetables, pearl barley and stews of mutton, lamb or beef.
Since some recipe variations also contain legumes, we simply replaced meat with beans for our plant-based version. But if you still want the look and feel of meat, you can use shredded jackfruit as well. We have a Braised Jackfruit recipe for tips and inspiration if you want to give it a try.
Before we start, let’s take a look at all the delicious ingredients that make up our vegan scotch broth:

pearl barley – This granola has nice nutty and toasted notes and a wonderfully chewy texture. It’s one of the signature ingredients of Scottish broth, so we don’t recommend substituting other cereals for it. But a good alternative would be spelt, and for a gluten-free option you can use oatmeal or buckwheat groats.

Vegetables – A classic Scotch broth mix contains onions, carrots and leeks as well as swedes or turnips. Shredded cabbage, added in the final minutes of cooking time, adds a pop of color and extra nutrients to the soup.

Yellow peas – Many Scottish soups contain a mixture of green peas, yellow peas and red lentils. Here we’ve gone with only yellow peas to keep the ingredient list short and sweet.
