1 (20-ounce) bag frozen french fries
For the gravy:
3 tablespoons vegan butter
3 tablespoons of flour
1½ cups low-sodium vegetable broth
1 tablespoon low-sodium soy sauce

2 sprigs fresh thyme leaves, or ¼ teaspoon dried thyme leaves

what do you do:
- On a rimmed baking sheet, spread the French fries evenly and bake according to package directions until golden and crisp.
- For the gravy, in a medium-sized saucepan over medium-low heat, melt the butter. Once melted, add the flour and whisk to combine. Once the flour is cooked through with the butter, slowly whisk in the broth ¼ cup at a time to make sure the gravy stays smooth. Stir in remaining ingredients and let gravy simmer over low heat for 5 minutes or until thickened.
- Place the roast on a large plate. Drizzle gravy on top. Add dollops of vegan mozzarella to fries to replicate cheese curds. Season with coarse salt, pepper and thyme. Serve hot.
