Easy Vegan Outdoor Skillet Bread

When summer heats up, and we head outside to cook, this outdoor skillet bread from Norwegian baking through the seasons Cookbooks provide a great container for meals. Try something delicious by melting vegan cheese on top with fresh herbs and mixed greens or dipping it into a brothy soup.

do you want:

¾ cup warm water
1 teaspoon of sugar
1 teaspoon active dry yeast
1¾ cups white bread flour
1 teaspoon of salt
1 tablespoon of safflower oil

what do you do:

  1. In a jar, combine warm water, sugar and yeast and let sit for 5 minutes or until foamy.
  2. In the bowl of a stand mixer fitted with a dough hook attachment, combine the flour and salt. Add the yeast mixture and oil and beat on medium-low for 5 minutes or until the dough is pliable. Using a spatula, tip the dough into a well-oiled large bowl, then cover with a tea towel and let rise in a warm place for about 1 hour or until doubled.
  3. When the dough has doubled in size, place on a lightly floured surface and fold the sides towards the center to form a ball. Spread 1 teaspoon oil in the bottom of a 9-inch cast-iron skillet. Place the skillet on a grill rack set over an open flame.
  4. After 1 minute, press the prepared dough into the skillet with a spatula, pushing it to the side of the pan. Cook the dough for 3 to 5 minutes or until the bottom of the dough is golden brown and slightly firm. Turn the dough and cook on the other side for about 3 minutes, or until the dough is cooked. Transfer to a cutting board and let cool slightly. Serve hot.
