This Asian noodle dish is easy, delicious, and able to satisfy your takeout cravings in 45 minutes or less!

This recipe for peanut pasta with tofu is incredibly easy. I had passed it on to my Healthy Home Cook followers. If you like Asian food, this dish is for you!
Say no to takeout and try this healthy version of your favorite vegetarian dish.

Made with simple, store-bought ingredients, there’s nothing crazy or out of the ordinary to look for. I hate trying a new recipe that has too many ingredients or an odd component that I have to spend an hour searching for at the grocery store.
WHAT INGREDIENTS DO I NEED?
- 1 14oz. extra hard tofu
- 10 ounces. Rice noodles (can substitute soba noodles or other gluten-free noodles)
- ¼ cup natural peanut butter (+1 tablespoon if you want a thicker sauce)
- ¼ cup seasoned rice vinegar
- 2 tablespoons soy sauce
- ½ teaspoon ground ginger
- ¼ cup chopped green onions
- ¼ cup chopped peanuts
- 3 tablespoons cornstarch
- Pinch of salt & pepper
- Optional topping: Sriracha sauce

HOW DO I MAKE PEANUT NOODLES WITH TOFU?
Start by preheating your oven to 375 degrees F. Open and drain the water from the tofu package and pat dry with a paper towel. If you have more time, let your tofu sit for about an hour so it can dry out as much as possible.
Cut the tofu into bite-sized pieces, mix with cornstarch, salt and pepper and place on a baking sheet. Bake for about 30 minutes (or until the tofu starts to brown).
While the tofu is cooking, cook about 300mL of rice noodles according to package directions (this will depend on the type of noodles you prefer).


In a small bowl, combine ¼ cup peanut butter, ¼ cup seasoned rice vinegar, ½ teaspoon ground ginger, and 2 tablespoons soy sauce and mix well.
Once the tofu and noodles are done cooking, add both ingredients to a large mixing bowl. Pour the peanut sauce over the noodles and stir well. Make sure all the pasta is well coated in the sauce.
Finally, garnish your dish with freshly chopped green onions and peanuts. Add a dash of sriracha sauce if you want some extra heat.

- Top your dish with the chopped green onions and peanuts. Add a splash of sriracha sauce, if desired.
