Hello, Take Away meets Meal Prep! This Orange Chicken Casserole is packed with flavor and uses nutritious ingredients to make an easy, one-pot meal.
It features long-grain white rice, chicken breast, broccoli, and a simple orange and chicken sauce for a colorful meal that will feed a crowd.
Best of all, this chicken casserole is made with a homemade orange chicken sauce made with better ingredients like orange juice, chicken broth, honey, and sriracha.

Can I use a different type of rice?
While we used jasmine rice, any type of long grain white rice will work.
Why is the rice still crisp after I baked the casserole?
The key to making sure the rice and spiciness of the casserole gets just right is to let the casserole rest, covered, for 15 minutes after removing it from the oven.
This is important so that the rice can absorb the remaining liquid!

Easy Orange Chicken Casserole
Orange Chickne Casserole combines a nutritious twist on orange chicken with jasmine rice for a flavorful one-pot meal of the week!

Ingredients
For the casserole
- 1.5 Lb. boneless, skinless chicken thighs cut into ~½ inch pieces
- 2 tablespoon soy sauce
- 2 tablespoon orange juice
- 1 teaspoon garlic powder
- 2 teaspoon sesame oil
- 1 Cup jasmine rice uncooked
- 1/2 medium yellow onion rolled
- 4 cups chopped broccoli

Preheat the oven to grill, then place the chicken in a 9×13-inch ceramic casserole dish. Add 2 tablespoons soy sauce, 2 tablespoons orange juice, garlic powder, and sesame oil to the chicken and toss to coat. Let the chicken marinate for 10 minutes.

Place casserole dish under broiler in oven and grill chicken for 2 minutes, flipping and adding another 2 minutes to brown chicken.

Remove the casserole dish from the oven and add the jasmine rice, onion and broccoli. Throw to combine.

Next mix the sauce. Place the orange juice and honey in a bowl and whisk until there are no honey globs at the bottom of the bowl. Add the remaining ingredients for the sauce to the orange juice and whisk.

Pour the sauce over the chicken mixture in the casserole and toss to combine. Make sure the rice is submerged in liquid.

Reduce oven heat to 375ºF and cover casserole dish with aluminum foil. Bake the casserole for 30 minutes.

Stir the casserole after 30 minutes (there is still a lot of liquid in it). Cover and bake for another 15-30 minutes or until the rice is done.

Remove the pot from the oven and let rest for 10 minutes without removing the lid.

Top with sesame and spring onions.
Tips & Hints
You can use any other long grain rice for this recipe. Do not use sprouted rice of any kind.
You can add more veggies to this dish if you like.
This is a gravy casserole. Let the dish rest longer if you want the rice to absorb more liquid.
