Of all chicken salad recipes, this one is this one Chicken Curry Salad Recipe is by far the best! What I love is that it uses store-bought shredded chicken for simplicity and comes together in minutes.

The flavors of the curry spice mixed with the sweetness of the raisins are unexpected but honestly so delicious! You’ll be amazed by the unique flavor and wonder how you’ve ever enjoyed boring old chicken salad before!

Ingredients in Curry Chicken Salad

  • Chicken – I prefer to use store-bought rotisserie chicken, which I shred, but you can also make your own chicken breasts to shred or dice. Feel free to try a different protein instead of fried chicken if you prefer.
  • curry powder – 1-2 teaspoons of curry powder. Add more or less depending on your taste.
  • celery – No chicken salad without celery!
  • Green Onions – only white + light green parts. Feel free to use red onions if you prefer.
  • raisins – the effervescence works very well with a little sweetness. You can also add fresh fruit like chopped grapes or apples.
  • slivers of almonds – for a bit of crunch. Feel free to omit if there aren’t any nuts.
  • mayonnaise – I like to use mayo in this recipe, but you can easily swap in Greek yogurt if you prefer.
  • salt + pepper – add to taste. Feel free to cut back on salt as you reduce sodium intake.

How to serve curried chicken salad

  • Lettuce Wrap – Grab a few large pieces of lettuce (butter or lamb’s lettuce work great) and top with curried chicken salad. Enjoy a carb-free meal!
