Simple ingredients for cinnamon rolls
So what’s the trick to making cinnamon rolls with just four ingredients?
It’s actually pizza dough!
You know that pizza dough they sell in the refrigerated section of stores like Whole Foods, Trader Joes, and Wegmans? The same batter can easily be used in place of homemade cinnamon roll batter.
You can buy regular pizza dough or whole wheat pizza dough. Often it is also vegan, although vegans should always pay attention to the ingredients to be on the safe side.
Or you can make your own dough at home – I love this vegan pizza recipe – and freeze it for a busy morning or rainy day.
I even had success making the buns with gluten free pizza dough. That doesn’t necessarily mean everyone gluten-free pizza dough will work, but it proves that it’s possible to make gluten-free cinnamon rolls using the pizza dough trick.
I haven’t tried the easy cinnamon roll recipe with an almond flour pizza dough yet, and I don’t currently have a keto cinnamon roll recipe on the blog (maybe I should make one?!). However, you can definitely add cinnamon to the batter of these keto muffins and top them with cream cheese frosting for an awesome and easy low carb no yeast cinnamon bun.
No one should be left out of the cinnamon roll fun!
Cinnamon Roll Frosting Recipes
You have many options here.
Cream Cheese Frosting: Beat 8 ounces cream cheese or vegan cream cheese with 4 ounces butter, 2 cups powdered sugar, and 1 teaspoon pure vanilla extract at room temperature. Add some milk of your choice if needed.
Easy Cinnamon Roll Frosting: Mix 1 1/2 cups powdered sugar or sugar-free powdered sugar with 2-4 tablespoons milk of your choice. Whisk ingredients together to form a glaze. Drizzle over the buns with a spoon.
Nutella cinnamon rolls: Instead of frosting, top with homemade Nutella or any chocolate hazelnut or peanut butter spread.
Other Easy Frosting Ideas: Feel free to top the buns with store-bought frosting or melted almond butter or coconut butter (my personal favorite). Or you can just leave them for a healthy breakfast with a sweetness similar to a muffin.

The quick cinnamon roll secret
This is my favorite trick for easy cinnamon rolls:
cut slices Before roll.
After spreading the filling on the dough, cut it into slices before rolling it up so you don’t have to worry about the filling spilling out and spilling all over the place.
Once you try it this way, you’ll never go back to the thread or floss method because this one simple change makes the entire cinnamon roll baking process so much easier. Plus, it’s so much less messy!
How to make easy cinnamon rolls
Begin by rolling out the dough on a floured surface. Any flour will work here.
If it’s too sticky to roll, just add a little more flour of your choice, little by little. Roll out the dough very thinly; just under a quarter inch works well. Then spread the rest of the ingredients on top.
Cut long strips of dough with a sharp knife. Roll up each strip as tightly as possible and place the unbaked cinnamon rolls in a greased casserole dish. Preheat the oven to 400 degrees Fahrenheit.
Bake for twenty minutes, then glaze the cinnamon rolls with either your favorite frosting or one of the homemade cinnamon roll frosting recipes above.
The recipe was adapted from my Vegan Cinnamon Rolls.
- 16 oz Pizza dough
- 2 tablespoon soft butter or coconut oil, or applesauce for low fat
- 3 tablespoon Sugar, unrefined or sugar substitutes if desired
- 2-3 teaspoon Cinammon

See the post notes above for what types of pizza dough work. For the cinnamon rolls: Roll out the dough on a floured surface (any flour will do, including coconut flour). If the dough is too sticky to roll out, simply add more flour of your choice a little at a time. Roll very thin (anything under 1/4-inch is perfect). Spread the rest of the ingredients on top. Cut long strips, then roll each one up as tightly as possible. Pour into a greased baking pan. Preheat oven to 400 F. Bake 20 minutes. Frosting recipes are listed above.
