Shawarma is a very popular Middle Eastern street food product made from marinated meats such as lamb, beef or chicken. It’s growing in popularity here in the US and now you can make it right at home with the most amazing blend of spices and just a few pantry staples.

I always go for boneless, skinless chicken thighs, but chicken breasts can definitely be used here. And with some olive oil, fresh lemons, garlic, and the spices from your pantry, you can marinate your chicken for two hours or overnight so it can soak up all the spices.

Toss these bad guys on your grill (or a cast-iron griddle) before serving them in a salad, some warm pita, or as a grain bowl. My personal favorite is to serve this with a side dish Tzatziki sauce and the whole flatbread.

  • 2 tablespoon olive oil
  • 1 tablespoon Water
  • 1 tablespoon Lemon peel
  • 1 tablespoon freshly squeezed lemon juice
  • 3 cloves Garlic, chopped
  • 2 teaspoon ground coriander
  • 2 teaspoon sweet peppers
  • 2 teaspoon ground cumin
  • 1 teaspoon ground turmeric
  • ½ teaspoon Cinammon
  • ½ teaspoon ground ginger
  • ¼ teaspoon cayenne pepper
  • ¼ teaspoon ground cardamom
  • Kosher salt and freshly ground black pepper, taste good
  • 2 Pound Boneless skinless chicken thighs
  • tablespoon rapeseed oil
  • SPICE MIX: In a medium bowl, stir together olive oil, water, lemon zest, lemon juice, garlic, coriander, paprika, cumin, turmeric, cinnamon, ginger, cayenne, cardamom, 1 teaspoon salt, and 1/2 teaspoon pepper.

  • In a Ziploc bag or large gallon-sized bowl, combine chicken and MIXED SPICES; Marinate for at least 2 hours to overnight, turning the bag occasionally. Drain the chicken from the marinade.

  • Preheat the grill to medium heat.

  • Brush chicken with canola oil; Season with salt and pepper.

  • Place the chicken on the grill and cook, turning occasionally, until the chicken is cooked through and the internal temperature reaches 165 degrees F, about 10 minutes.

  • Serve immediately with tzatziki sauce.
