This Easy Cheesy Breakfast Casserole your family will love. Super easy to make, very similar to a quiche but with fewer eggs and reheats really well. We love the sausage in this dish, combined with the green chillies and peppers the flavor is wonderful.
Easy Cheesy Breakfast Casserole Ingredients needed:
Pork breakfast sausage
Green paprika
Green chillies
peppers
all purpose flour
cottage cheese
salt pepper
eggs
butter
Shredded Cheddar Cheese
Made with simple ingredients, this dish would be the perfect addition to any breakfast or brunch. So many people will say, “I don’t like cottage cheese, can I use something else?” You can always use ricotta, but you can’t taste the cottage cheese. I’ve never tasted it in a recipe where you actually bake it. The cheese will melt just like any other cheese. We topped this with sour cream and we all loved it.
There are a few changes you could make to this dish:
- Use turkey sausage for a lighter dish
- Use smoked sausage or smoked turkey sausage to make them lighter
- Cottage cheese is a great source of protein. So if you’re looking for a higher-protein breakfast, swap out the sausage for turkey sausage and keep the cottage cheese and you’ve got a much higher-protein option.
- Replace the sour cream with Greek yogurt, which is lower in calories and higher in protein
- Use whatever shredded cheese your family likes
This dish also reheats well, so you can make it on a Sunday and enjoy it for a few mornings. We made this in a cake stand and it worked great!

Easy cheesy breakfast casserole
This easy cheesy breakfast casserole your family will love. Super easy and so good!
Servings: 6 portions
- 1/2 Pound pork sausage
- 1/4 Cup chopped green pepper
- 4 ounce can green chillies dehydrated
- 4 ounce can peppers dehydrated
- 1/4 Cup all purpose flour
- 1/4 teaspoon Salt
- 1/4 teaspoon black pepper
- 1 Cup cottage cheese
- 4 tablespoon butter melted
- 4 eggs
- 1 to 1 1/2 cups grated cheddar cheese could use any cheese you like

Brown sausage and green pepper in the pan on the stove. drain, if necessary

Stir in green chilies and peppers.

In a bowl, combine flour, salt, pepper, cottage cheese, and melted butter. Stir to combine. stir in eggs.

Spray a 10-inch cake pan or casserole dish and pour in the flour, cottage cheese, and egg mixture.

Spread the sausage mixture on top and place the grated cheese on top of the sausage.

Bake in a preheated 375 degree oven for 35 minutes.
