Ingredients
- Chicken soup: I prefer to use low-sodium, but whether you use a chicken broth to make your broth or buy it in a can, it makes a great soup base.
- Soy sauce: The first flavor that many think of when thinking of Asian cuisine includes the salty umami flavor.
- Rice Wine Vinegar: Has a delicate flavor that is less acidic than ordinary vinegar.
- Ginger: A pungent flavor that can be sweet and tangy, an essential flavor of many Asian-inspired dishes.
- Sesame oil: Has a nutty, earthy flavor that can be enhanced by using toasted sesame oil.
- Chili Paste: Gives the soup a wonderful kick of spiciness.
- dumplings: My choices are Costco frozen chicken and vegetable dumplings or Trader Joes.
- Mushrooms: Baby bella or button mushrooms are a great choice for this dish, and they have a wonderful umami flavor that pairs well with the soy sauce.
- Spinach: Baby spinach is tender and easy to use in the soup, but you can also use baby cabbage.
- rice noodles: Easy and chewy, they absorb the flavors of the ingredients around them.
