ingredients

Makes about 12-14 servings

Cocoa Brownies

  • 3 eggs
  • 1 Cup (200g) sugar
  • 1/2 tsp (2g) salt
  • 3/4 Cup (170 g) vegetable oil
  • 1 tsp (5g) Vanilla Extract
  • 3/4 Cup (90 g) unsweetened cocoa powder
  • 3/4 Cup (90 g) all-purpose flour

Chocolate Cream Cheese Frosting

  • 7 oz (200 g) semi-sweet chocolate
  • 1/2 Cup (120 g) whipping cream
  • 9 oz (250 g) cream cheese room temperature
  • 1/3 Cup (40 g) powdered sugar
  • 1 tsp (5g) Vanilla Extract
  • 1 ¼ Cup (300g) whipping cream (35% fat) chilled

For decoration, optional

  • 3.5 oz (100 g) semi-sweet chocolate
  • 3.5 oz (100 g) whipped cream
  • fresh blueberries
  • edible gold powder

instructions

Prepare the cocoa brownie layers.

  • Preheat the oven to 350F (180C). Grease three 20cm springform pans and line with parchment paper.

  • In a bowl, whisk the eggs well with the sugar and salt. Incorporate the oil and vanilla extract.

  • Sieve the flour and cocoa powder and work them in completely with the whisk.

  • Divide the batter into the prepared molds.

  • Bake for 10-12 minutes, until a toothpick inserted in the center comes out clean or is stuck with a few moist crumbs.

  • Leave to cool completely.

Prepare the Chocolate Cream Cheese Frosting.

  • Place chocolate and 1/2 cup (120g) heavy cream in a heatproof bowl and set over a saucepan of simmering water. Melt over low heat. Leave to cool to room temperature.

  • In a large bowl, stir cream cheese until smooth. Add powdered sugar and vanilla extract and mix. Mix in the melted chocolate.

  • Add whipping cream and stir until stiff peaks form.

Assemble the cake.

  • Place the first cake base on a serving platter. Spread â…“ of the chocolate icing on top.

  • Place the second cake layer on top and spread another â…“ of the chocolate icing on top.

  • Top with the third cake base. Spread the remaining icing over the top and edges of the cake. Smooth the top and edges.

  • Leave to set in the fridge for at least 2 hours or even overnight.

  • Decorate the cake with chocolate ganache, fresh blueberries and edible gold powder. Enjoy!
