To make a deconstructed stuffed pepper casserole you will mainly need:

  • ground turkey: Use turkey instead of beef for a nice flavor change.
  • rice: A simple and delicious carbohydrate that will keep you full!
  • paprika: Cut these into larger pieces for easier tasting.
  • Onion: Simple but necessary.
  • Tomato sauce: This tomato sauce packs a ton flavor to this casserole.
  • mozzarella cheese: This is a different cheese than your classic stuffed pepper recipe, but it definitely holds its own.

Using ground turkey instead of ground beef

A classic stuffed pepper recipe would typically use ground beef. In this recipe I use ground turkey. There are SO MANY Recipes with ground beef, where sometimes it’s nice to change things up.

Another benefit of using ground turkey instead of ground beef is for nutritional reasons. Ground turkey tends to have less saturated fat than ground beef. If you’re looking to reduce the amount of saturated fat in your diet, this is an easy switch!

How to make a stuffed pepper casserole

Start preparing this casserole by browning the ground turkey. Next, add the chopped onion, chunks of peppers, spices, bouillon broth, rice, and of course, cheese!

Once the rice is tender and everything is well combined, pour the mixture into a 9×13 casserole dish. Sprinkle with more cheese if you like.

At this point you can place the dish on the ridge for later baking, or bake it straight away for a quick 25 minutes.

This is a filling meal on its own, but if you want a side or two, I’d pair it with a simple one Caesar salad and some bread twists!

Ingredients

  • 1 Pound ground turkey
  • 4 paprika 2 red and 2 green, cut into larger squares (see photo above)
  • 2 cups rice
  • 1 Can Tomato sauce 15 ounces
  • 1 Onion Finely chopped
  • 2 cups Grated mozzerella cheese
  • 2.5 tablespoon Worcester sauce
  • 2 Precious Metal Cube
  • 2 cups Water Boil
  • 2 teaspoon Garlic
  • 2 teaspoon Italian spice
  • 1 teaspoon Parsely
  • salt and pepper to taste

instructions

  • Preheat oven to 350 degrees Fahrenheit. Spray a 9×13 pan with nonstick spray and set aside.

  • Heat 2 cups of water to a boil, then add bouillon cubes and mix until dissolved. Put aside.

  • Clean all vegetables. Finely chop the onion and cut the bell pepper into 1/2 cm pieces.

  • In a large skillet add the turkey and cook over medium-high heat. Then, once half cooked, add the rice, tomato sauce, onions, peppers, Worcestershire sauce, broth, garlic, Italian seasoning, parsley, and salt and pepper to taste. Once the rice is tender (about 10 minutes), add half the cheese and mix.

  • Pour the mixture into the greased pan and flatten. Top with additional cheese. Cover with aluminum foil and bake in the oven for 25 minutes.

  • Enjoy!
