Soft and fluffy mantou made from simple ingredients, hand kneaded and dairy free. It can be made with or without sugar and in different shapes or flavors as you wish! When done correctly, the steamed buns should be smooth and fluffy and stay soft at room temperature. Leftovers can be stored in the freezer and reheated before serving.

125 g plain flour
30 grams of hot water
1 tsp sugar (optional)
1/2 tsp yeast
40g water (35°C)

1. Combine flour and hot water in a mixing bowl, mix well with two chopsticks, then stir in sugar if necessary.
2. In another small bowl, combine yeast and water and mix well. Mix all ingredients (1+2) and knead into a dough, cover and leave to rest for 10 minutes. Add 1/2 tbsp lard and knead the dough for 10 minutes or until smooth and elastic as shown in the image below.
3. Divide the dough and shape as desired. When making bunnies, use the picture as a reference. Add a little charcoal powder to a small portion of the dough to draw the bunny’s face details.
4. Proof for 1 hour and sTeam for 15 minutes (steamer does not need to be preheated). When it’s done, turn off the heat and wait 5 minutes before opening the lid.
