Cucumber Watermelon Feta Salad is a quick and refreshing salad made with diced juicy watermelon, fresh mint, cool sliced ​​cucumbers, salty feta and pistachios. For 6 to 8 people.

This is the salad of the summer.

With only 6 ingredients, this salad takes under 15 minutes to prepare. And although this recipe says it serves 6 people, I could easily eat the whole thing. If watermelon and cucumber aren’t your thing, I have plenty of other summer salad recipes that might interest you. To make this Cucumber Watermelon Feta Salad you will need:

  • watermelon (seedless) – I use pre-cut watermelon slices (thanks Meijer stores) and cut them into cubes.
  • english cucumber (seedless) – Peeled or unpeeled is up to you. Personally, I think it looks chic partially peeled.
  • feta cheeseAdds a delicious salty flavor that pairs perfectly with watermelon and cucumber. If you’re vegan, use vegan feta cheese.
  • pistachiosImparts crunchiness, nutty flavor and contrast in color and texture.
  • mint (fresh) – I love mint with pistachios. It gives the salad a fresh herbal taste. Don’t you like mint? Try basil!
  • lime juiceFor a touch of acidity and flavor.

In a large mixing bowl, combine 2 pounds of diced seedless watermelon, 1 sliced ​​cucumber (I used a cutter and linked a similar one in the printable recipe at the bottom of this post), 2 ounces of crumbled feta cheese (if you’re vegan, use vegan ). feta cheese) and 1/3 cup chopped pistachios.

NOTE: I save some feta and pistachios for garnish at the end.

Finally, add the 1/4 (loosely wrapped) cup of fresh mint leaves. Tear off the leaves by hand to keep them fresh and prevent them from turning brown.

Squeeze in the juice of a lime.

Stir gently to combine. Separate any cucumber slices that are sticking together.

Transfer to a serving bowl and top with additional mint leaves, feta, and chopped pistachios.
