I realize cold recipes usually appeal to most people in the warmer months, but I totally enjoy cold salads any time of year! They are a staple in my weekly meal planning.

This Cucumber Black Bean Salad is no exception.  The protein-packed black beans, cool cucumbers, and salty feta is the perfect combination. It’s healthy, easy to make, and perfect for a light lunch or as a complementary side dish.

Like I have said before, I love being creative in the kitchen!  It keeps meals exciting and fun for everyone. It especially helps when you are watching your weight and bored with the same old options.  The best way I have found to be “creative” in the kitchen is to use only the ingredients you have in your house for at least one meal a week.  Don’t go to the store to get anything!  It forces you to create something new and unique.  If the recipe you try ends up to be terrible, at least you tried!  Don’t be afraid to attempt new things in the kitchen.  

I recently applied this approach and surprisingly fell in love with this Cucumber Black Bean Salad.  It’s so simple, but we couldn’t stop eating it!

WHAT INGREDIENTS DO I NEED?

  • 15 oz can of black beans – drained and rinsed
  • 1 large cucumber – chopped (or 3-4 mini cucumbers)
  • 1 roma tomato – chopped
  • 3 tablespoon olive oil
  • ¼ cup fresh parsley
  • â…“ cup crumbled feta
  • Salt & pepper to taste
  • optional: squeeze of lemon juice

My husband and I love black beans.  We use them in so many different meals.  Smokey Black Bean Soup, Sweet Potato Black Bean Tacos, Black Bean Burgers…its the perfect, protein packed addition to any recipe!  Ok, maybe not ANY recipe…I can’t really imagine a black bean ice cream. But, I’m sure someone has tried it.

HOW DO I MAKE CUCUMBER BLACK BEAN SALAD?

This salad is an easy, no-cook option for any busy weeknight. All you have to do is open, drain and rinse your black beans. Combine the beans with the remaining chopped ingredients and feta cheese.

Drizzle with olive oil, lemon juice (if using), and top with salt & pepper.

Serve immediately or store in your refrigerator until you are ready to serve.

This is a very versatile recipe. If you are not a fan of black beans, feel free to switch them out for chick peas or your favorite bean.  Be creative and think outside of the lunchbox! 🙂

Cucumber Black Bean Salad

Ingredients

Instructions

    1. open, drain and rinse your black beans.
    2. Chop the cucumber, tomato, and parsley.
    3. Combine the beans with the chopped ingredients and feta cheese.
    4. Drizzle with olive oil, lemon juice (if using), and top with salt & pepper. Toss well.
    5. Serve immediately or store in your refrigerator until you are ready to serve.
