About once a month we go to my parents’ house to have lunch with my brother and his family who also live in the city. I didn’t grow up anywhere near my grandparents or cousins, and I can’t tell you how special it is to see all the kids running around making memories together at their grandparents’ house. It’s priceless, really!

My mom always cooks us a big lunch and usually has a dip or appetizer ready to snack on when we sneak in the door. The combination of flavorful, juicy, cheesy dip with a crunchy chip is complete irresistible.

Crock Pot Buffalo Chicken Dip tops the title of Perfect Hot Dip. You can prepare it in a small 3 liter saucepan or a large 6 liter saucepan. Plus, since we’re using canned shredded chicken breasts for this recipe, no extra cooking or work is needed before throwing everything in the pot. (Don’t knock until you taste it!)

No extra bowl, oven, or casserole dish required—the slow cooker does the work of heating the ingredients for us. Simply!

This dip is a game day must-have (easier than Buffalo Chicken Wings!), perfect to take to an office potluck, and really any occasion in between.

As written, this crockpot buffalo chicken dip recipe is about a 5/10 on the heat scale. It’s not too hot for kids (my eldest plus my niece and nephew – all currently under 13 – inhale it!). So if you want to make it spicier, feel free to add more buffalo sauce, hot sauce, and/or red chilli flakes.

As we said, all you need for this easy hot dip recipe is 5 everyday ingredients.

  • Cream cheese. I like to use 1/3 less fat cream cheese because you don’t notice a difference with full-fat cream cheese.
  • Grated cheese. Finely grated Colby Jack cheese melts perfectly in the Dutch oven. Spicy shredded cheddar cheese would be great too.
  • Buffalo Wing Sauce. Frank’s Buffalo Wing Sauce is my gluten-free brand of wing sauce. Feel free to add more for extra heat or a spritz or 27 of Frank’s red hot sauce, which is also GF.
  • ranch dressing. Save the good stuff for your salads—any old ranch will do for this dip. I like Ken’s ranch dressing. You can use blue cheese dressing if you prefer that flavor.
  • Canned chicken. Trust. only trust! It will be alright, and indeed it will be more than ok because canned chicken shreds are wonderfully shredded into this dip creating a creamy texture. I use the Swanson brand.

How to store and reheat leftovers

If you’re lucky enough to have leftovers, simply scoop the dip into a glass storage container (plastic storage containers might get stained by the wing sauce, FYI) and heat up the balls in a glass bowl in the microwave.

I also slow cooked this dip, then cooled it completely, then reheated it in the crock pot a few days later. That said, it’s perfectly fine to slow cook ahead of time!

5 ways to reuse leftovers

The leftover Slow Cooker Buffalo Chicken Dip is also great for reusing in other dishes. Here are a few ideas:

  1. Wrap. Place on a wrap, then top with shredded carrots, crumbled feta or blue cheese, and spring mix or arugula. roll, then eat.
  2. Sandwich. Stuff in a bun or between two slices of bread to make a grilled cheese sandwich (YUM!)
  3. baked potato. Spice up a baked potato with a scoop of leftover dip and chopped spring onions.
  4. nachos Make nachos with the dip and an extra sprinkle of shredded cheese (“That’s too much cheese!” — no one ever.) Bake until warm and melted.
  5. Pasta. Warm and then mix with cooked noodles.

How to Make Crock Pot Buffalo Chicken Dip

Like I said, all you have to do is add the ingredients to your crock pot, stir to combine, and then start slow cooking. Make sure your cream cheese is at room temperature to make this process a bit easier.

  • If you use one 3 liter crock pot Cook on LOW for 1-1/2 – 2 hours, stirring occasionally.
  • If you use one 6 liter crock potcook on LOW for 1 – 1-1/2 hours, stirring occasionally.

What goes best with Buffalo Chicken Dip?

I like to turn my slow cooker’s heat setting to warm, then the dip stays good on the counter for the afternoon. We are happy to serve this with:

  • tortilla chips
  • Frito Scoops
  • Cut mini sweet peppers in half
  • carrot sticks or chips
  • celery sticks
  • Simple Mills Almond or Pita Crackers
  • cucumber slices
  • Any extra veggies you can think of! Sliced ​​radish would be great.

Description

Ingredients

  • 2, 10 ounce canned chicken breast pieces (I use Swanson brand)
  • 8 ounces block cream cheese, softened to room temperature
  • 4 ounces finely grated Colby Jack cheese
  • 1/2 cup Frank’s Wing Sauce (or more for extra spiciness)
  • 1/2 cup gluten free ranch dressing
  • For dipping: tortilla chips, carrots, celery

directions

  1. In a 3 quart crock pot or a 6 quart crock pot, add chicken, cream cheese, shredded cheese, wing sauce and ranch dressing. Stir to combine, then heat on LOW until hot, 1-1/2 – 2 hours, stirring a few times. If using a 6 quart saucepan, the dip will be hot in about 1-1/2 hours. Serve with dippers.
  2. Get ahead: Add all of the ingredients to the pot of your slow cooker, then refrigerate up to 2 days ahead. Place on the bottom of the crock pot and cook on low for a further 30 minutes, or until warmed through.
