Super tasty fries with green beans in an oven or air fryer
In our opinion, no Thanksgiving table is complete without a creamy green bean casserole, and we love tossing these fresh, lively beans into soups, stir-fries, and pasta dishes. However, green beans are just as delicious as a simple side dish with minimal ingredients — even more impressive than crispy-coated (kid-approved and crowd-pleaser!) green bean fries.
These crispy green bean fries are a delicious and healthy way to satisfy roast cravings. They require less than a handful of inexpensive pantry ingredients, and you can bake or air fry them in under 15 minutes.
Unlike many green bean fries recipes, this version skips messy and tiresome egg dredging/washing steps. Instead, these vegan green beans use ground flax flour and minimal hands-on prep for baked green bean fries that are tender in the center and crispy on the outside while remaining super diet-friendly.
However, they’re also super versatile — so if you want to use panko crumbs, you can. You can also further flavor the beans and add other flavorful extras to tweak the recipe to your liking. No matter what you do, these Crispy Green Bean Fries make a delicious, crunchy, addictive, and healthy snack or side dish.
The ingredients

- Green beans: It is best to use fresh green beans (sea beans/snack beans) with firm pods and a bright green colour. French green beans should also work, but take less time to cook.
- Flax flour: To keep this recipe healthy and naturally keto and gluten free, we left out breadcrumbs for flax flour. If you only have whole flaxseeds, use a coffee/spice grinder to grind them to a flour consistency. You can also use almond flour, seasoned breadcrumbs, or panko breadcrumbs for this recipe
- Oil: Use neutral cooking oil such as avocado oil, vegetable oil, canola oil, olive oil, etc.
- salt & black pepper: To season the fries with green beans.
What else could I add?
There are several ways to enhance the flavor of these crispy baked green beans.
- nutritional yeast: Add 1-2 tbsp to the spice mix for Vegan Green Bean “Parmesan” Fries. Other vegan Parmesan alternatives would also work.
- For seasoning: Add some chilli or cayenne pepper powder for seasoning, or garnish the green bean baked fries with red pepper flakes.
- Spices: There are several ways to flavor the beans. Italian seasonings, lemon pepper, Cajun seasoning, cumin, etc. For the base seasoning, we like to use a small amount of garlic powder, onion powder, and smoked paprika (about ¼ tsp each per pound of green beans).
- lime wedges: Add to serve for brightness.
How do you make green bean fries in the oven?
- 1) First, preheat the oven to 425F/220C. Then rinse, pat dry, and trim the green beans by grabbing a bunch, aligning the ends, and trimming the ends. Repeat on the other side. Also remove any hard strings.
- 2) Then mix the green beans with all the ingredients in a medium sized bowl until well coated.

- 3) Spread the green bean fries in an even layer on a parchment-lined baking sheet and bake for 10-15 minutes until brown and crispy on the outside and tender in the center.

Hot air fryer with green beans
Air fryer green bean fries are crispy and delicious and cook in half the time of baked green beans. To do this, prepare the beans as above, then spread the green beans in a single layer in the air fryer basket (spray the basket with cooking oil first).
Air fry at 370F/180C for 7-9 minutes, shaking the basket halfway.
frequently asked Questions
It may work if you let them thaw, blot away moisture, then proceed with the recipe as directed. However, the fries will be softer.
Yes, this recipe uses minimal oil and a crunchy coating of ground flaxseed for a dish that’s high in fiber, a small amount of protein, and several vitamins and minerals, like vitamins A, C, and K, as well as calcium, iron, and folate— and all this with a low calorie content (only 30 kcal per cup of beans).
This recipe uses oil instead of egg wash, so it needs to be substituted and not omitted entirely. You may be able to use aquafaba instead (the liquid from a can of chickpeas – use the beans to make hummus or chickpea tuna salad). Whip the liquid until white and fluffy before dunking the beans, then sprinkle over the coating.
Top recipe tips and notes
- To save time: It is possible to buy pre-cut green beans.
- Remove all threads: Some green beans can contain tough, fibrous strings that are uncomfortable to chew. If you notice any, peel them off as you chop the beans.
- Don’t overfill them: The French fries with green beans need airflow to get them really crispy.
- The cooking time may vary: Based on batch size, bean thickness, and your desired internal texture.
- For softer green beans: Pre-cook them by blanching or microwaving for 2-3 minutes before placing in an ice bath, patting dry and continuing with the recipe.

What do you serve with crispy green beans?
- Vegan burgers (instead of normal fries)

You can also enjoy these crispy green beans on your Thanksgiving and holiday table along with mashed potatoes, gravy, stuffing and more.
Storage Instructions

To warm up Return the green beans to the oven (at 175°C for 10-15 minutes) or air fryer (3-5 minutes) until reheated and slightly crispy. Avoid using a microwave as the beans will become very soft.
