What is a chicken cutlet?
A chicken cutlet is a thin piece of chicken breast. Chops can be purchased but are also easy to make with whole chicken breasts. Because chicken cutlets are thinner and generally more even, they cook quickly and evenly!
To prepare chicken chops, Cut a chicken breast in half crosswise (pictured below), then pound it with a meat mallet until it’s about 1/4 inch thick. That’s all there is to it!


How to make chicken chops
This easy chicken cutlet recipe is as easy as 1, 2, 3 and ready in under 30 minutes!
- Cut the lightly frozen breasts in half lengthwise, then pound them to about 1/4 inch thick with a meat mallet or tenderizer.
- Dip the chicken pieces first in the beaten egg, then in the breadcrumb mixture (see recipe below).
- Fry in oil until golden brown and crispy!
Serve with your favorite dipping sauces for a delicious appetizer or main course.
Add a lemon wedge on the side to spice it up for the grown-ups in the room, or serve with buffalo sauce or honey-mustard dressing.

oil for frying
My choice of oil for pan frying is vegetable oil. It has a high smoke point and pan frying is usually a quick process. Vegetable oil can have an unpleasant odor if it’s hot for too long, so heat your oil just before boiling.
Refined peanut oil is also a good choice (and it’s also perfect for deep frying).

The question should actually be: “What not serve?” So many wonderful things go with these chops, it’s hard to pick just a few.

Crispy chicken cutlets
Breaded chicken cutlets are pan-fried with panko and parmesan for a sure hit every time!

Freeze the chicken breast for about 20 minutes.

Halve chicken breasts horizontally and pound to ¼ inch thickness.

Combine panko breadcrumbs, Parmesan cheese, and garlic powder in a small shallow bowl.

Whisk egg in a separate bowl. Dip the chicken in the egg and then in the crumb mixture which will be pressed down.

Preheat oil in a large skillet over medium heat. Carefully add chicken and cook 2-3 minutes per side or until golden brown and chicken has reached 165°F.
Leftover chicken can be stored in an airtight container in the refrigerator for up to 3 days. Heat in a pan on the stove.
