Did anyone eat a lot of fish fingers as a kid? I used to love fish fingers but haven’t eaten in years. These give me big fish stick vibes but in a more delicious way. 😉

These salmon bites have a seasoned, light breading and are baked until golden. They’ll get super crispy on the outside for a delicious crunch – that crunch is key I think!

Herbs and Dijon mustard make them super flavorful, but they also pair beautifully with dipping sauces.

This recipe uses a bake-then-broil method — it’s the easiest way to get super crispy, golden-brown nuggets without having to pan-fry anything (or toast the breadcrumbs in a separate pan).

Let the salmon nuggets bake then flip them so the oiled side can crisp up under the grill without messing up another pan, it makes all the difference! That way there’s less mess, but still plenty of crunch without overcooking the salmon (because chewy salmon just isn’t cool).

Plus, salmon is super nutritious: it’s high in protein, potassium, and a variety of vitamins. It is also rich in omega-3 fatty acids, which improve heart health.

For these crispy salmon bites you need:

  • Salmon fillet cubes
  • Panko Breadcrumbs (Natural/Unflavored)
  • All-purpose flour (this helps hold the breading together)
  • egg
  • Dijon mustard
  • Spices & Herbs (Onion Powder, Granulated Garlic, Dried Parsley and Dried Dill)

You can easily change up the spices in the breading mix if you like!

I love the combination of dill and parsley, but feel free to substitute 2 teaspoons of any salt-free seasoning mix for the herbs and spices here. For example: Italian Seasoning, Cajun Seasoning, Garlic Herb Seasoning, etc.

You can also just use the onion powder and granulated garlic if you like!

Ingredients for Baked Salmon Nuggets

How to make salmon bites in the oven

Start by cutting your salmon fillets into 2-inch cubes.

Then place three shallow bowls on the counter. Place the flour and salt in one, the egg and Dijon mustard in the second, and the panko breadcrumbs plus spices/herbs/salt in the third.

Coat each salmon cube with the flour mixture, being careful to shake off any excess flour. Then roll in the egg mixture. Finally, press into the breadcrumbs and brush all over. (Keeping one hand dry for this step helps).

Place the breaded salmon cubes in a single layer on a baking sheet lined with parchment paper. (Spray with cooking spray or drizzle with olive oil first to keep the nuggets from sticking after baking).

Bake 10 minutes. Then turn off the heat and remove from the oven.

Now here’s the key to the crispy exterior – don’t skip this step!

Turn the oven on to grill. Flip each nugget (oiled side up) then return pan to oven and broil 2-3 minutes until golden and crispy.

Remove from the oven and serve with your favorite dipping sauces!

Homemade honey mustard dipping sauce

Looking for a homemade dipping sauce? This yogurt honey mustard sauce is creamy, a little bit sweet and a little bit tangy – the best combination! Plus, it’s super quick and easy to throw together.

Simply combine Greek yogurt, honey, Dijon mustard, apple cider vinegar, and salt in a small bowl. Stir until well combined, then serve on the side for dipping! (See link above for full recipe quantities/details.)

I recommend using full-fat (4 or 5%) Greek yogurt for the best creamy texture and flavor (rather than no-fat or low-fat).

Ingredients:

  • 1 pound salmon fillet, skin removed

  • 1/4 cup all-purpose flour

  • 1 teaspoon kosher salt, divided

  • 1 egg

  • 2 teaspoons Dijon mustard

  • 1 cup regular panko breadcrumbs

  • 1/2 teaspoon granulated garlic

  • 1/2 teaspoon onion powder

  • 1/2 teaspoon dried dill

  • 1/2 teaspoon dried parsley

  • Olive oil or cooking spray as needed

Instructions:

  1. Preheat the oven to 400 degrees F.
  2. Cut the salmon fillet into cubes of about 2 cm.
  3. Arrange three shallow bowls. In a bowl, whisk together the flour and 1/2 teaspoon salt. In the second bowl, whisk together the egg and Dijon mustard. In the third bowl, stir together the panko, granulated garlic, onion powder, dill, parsley, and remaining 1/2 teaspoon salt.
  4. Dredge each piece of salmon in flour, then shake off excess flour and dredge in egg, then in the breadcrumbs and herb mixture and press in the breadcrumbs. The easiest way to do this is with a “dry hand” handling the flour and breadcrumbs and a “wet hand” handling the egg.
  5. Line a sheet pan with parchment paper. Drizzle lightly with olive oil or spray with cooking spray and arrange the breaded salmon pieces in a single layer without touching them.
  6. Bake for 10 minutes, then turn off the heat and remove the pan from the oven. Set the oven to broil.
  7. Flip the nuggets so the oiled breading side is facing up and grill until golden and crispy, 2-3 minutes.
  8. Optional: Serve with it homemade honey mustard dip.

Remarks:

  • The seasoning in the breading mix can be totally flexible! I especially love the dill/parsley combo, but you can also use 2 teaspoons of any salt-free dill/parsley/garlic/onion seasoning mix – like Italian seasoning, Cajun seasoning, garlic herb seasoning, etc.
