Fancy a creamy dressing with grilled asparagus or zucchini? It will not disappoint you. This dressing can also be used as a “cream” for nachos, tacos or burritos, or as a dip for a raw food platter.

To make this Cilantro Lime Avocado Dressing you will need:
- coriander – Lends a touch of herbaceous freshness.
- Easy low-fat Greek yogurt – Adds creaminess without the fat.
- avocado – Imparts rich flavor and creaminess.
- green onions – Adds a subtle fresh onion flavor.
- Garlic – Adds a distinct, bold flavor.
- lime (peel and juice) – Imparts bright citrus flavor and acidity.
- avocado oil – Adds fullness and helps emulsify the dressing.
- Apple Cider Vinegar – For sweetness and acidity.
- Honey – Imparts flavor and sweetness.
- kosher salt – Enhances the flavors in this dressing.
- Water – Use to thin dressing to desired consistency.
Make the dressing:
In a blender, combine 1 cup cilantro (leaves and stems), 1/4 cup non-fat Greek yogurt, 1 small avocado, 2 chopped spring onions, 1 large clove garlic, crushed and peeled, zest and juice of 1 medium lime, 2 tablespoons avocado oil, 1 tablespoon apple cider vinegar, 2 teaspoons honey, and 1/2 teaspoon kosher salt.
Mixture.
Until it’s smooth. While mixing I add 1 to 4 or more tablespoons of water to thin the dressing as desired.
Serve immediately or chill.

Store the dressing in a jar or container with a tight-fitting lid.

Cilantro Lime Avocado Dressing
- 1 Cup coriander
- 1/4 Cup Easy low-fat Greek yogurt
- 1 small avocado, about 2 ounces
- 2 green onions, roughly chopped
- 1 large clove Garlic, crushed and peeled
- 1 small lime, zest and juice
- 2 tablespoon avocado oil
- 1 tablespoon Apple Cider Vinegar
- 2 teaspoon Honey
- 1/2 teaspoon kosher salt
- 2 to 4 tablespoon Water, or as needed for desired consistency

In a blender, combine cilantro, non-fat Greek yogurt, avocado, scallions, garlic, lime zest and juice, avocado oil, apple cider vinegar, honey, and salt.

Blend, adding water (tablespoon at a time) until desired consistency is achieved.
