Creamy Chicken Noodle Casserole

I consider myself a casserole connoisseur. Does that sound presumptuous? 😉 Honestly, I feel like casseroles get a bad rap.

I have a feeling most people think of casseroles as boring and gross. Let me tell you, if you’re feeding a group of people (or in my case: 4 hungry boys) or just like to grab leftovers from the fridge for a quick lunch or dinner, a casserole is the way to go.

How do you make a chicken casserole?

There are so many different ways to make chicken pasta casserole.

  1. Any type of pasta will work (I chose rotini for this one).
  2. Use cream soups – or not. There are so many ways to create a creamy blend. If you like meat, add it!
  3. You can use any extras you can find in your fridge or pantry.
  4. Top with melty cheese or a buttery breadcrumb mixture (I made both!).

It’s almost like a science experiment – find out which flavors you think go together and let your imagination run wild!

How long do you bake a casserole in the oven?

What I love about this chicken pasta casserole recipe is that it uses already cooked chicken. I try to shop for groceries for the week and plan my meals.

I like to buy a fried chicken and shred it, or I toss some Chicken in casserole to have for the week for meals or snacks. If the chicken is already done, this dish is super easy.

The noodles are cooked separately so all you really have to do is make the sauce which is so easy, boil the noodles and toss it all together with the chicken. I added a breadcrumb mixture on top, but you can just toss cheese on top if you prefer!

It bakes in 30 minutes until bubbly and toasty. Your house will smell amazing.

Creamy Chicken Noodle Casserole

  • Melt butter and oil together in a pan. Add the diced onion and cook over medium-high heat until the onion is soft. Add salt, pepper, poultry seasoning and stir to combine. Pour in the chopped garlic and cook until fragrant.

  • Meanwhile, heat salted water for pasta according to package directions. Preheat oven to 375ºF.

  • To the onion and garlic mixture, add the cream of chicken soup, sour cream, and diced green chilies. Stir in milk slowly – half a cup at a time – until desired consistency is achieved.

  • Once mixed, stir in 2 cups of the grated mozzarella cheese and all of the parmesan cheese and allow to melt. Turn off the hob and turn off the heat.

  • Once the pasta is cooked, drain and add to the creamy mixture along with the cooked chicken. Pour into a 9×13 casserole dish. Top with the remaining 1/2 cup mozzarella.

  • (Optional) Breadcrumb Mixture:Add panko breadcrumbs to the melted butter and mix with a fork. Spread on top of casserole and bake uncovered for 30-35 minutes or until bubbly and warmed through. Enjoy!
