How to make a spring mix salad
- Prepare the cashew nuts. The roasted cashews in this recipe take the longest (9 minutes). So be sure to follow the recipe on the recipe card to roast them to perfection.
- Cut vegetables + fruit. Prepare the cucumber, red onion, strawberries and blueberries and place in a bowl with a spring salad.
- Whisk together the dressing. Whisk together the vinegar, honey, salt and pepper until the honey has dissolved.
- Assemble the salad. Drizzle the dressing over all the salad ingredients and garnish the salad with cashews, feta and lemon zest.

Ingredients

- 1/4 Cup white wine vinegar
- 1 tablespoon Honey
- 1/4 teaspoon Salt
- 2 cups sliced English cucumbers
- 5 oz. Spring mix salad
- 1 Cup fresh blueberries
- 1/2 Cup strawberries thinly sliced
- 1/2 finely chopped medium red onion
- 2/3 Cup Feta crumbles
- 3 tablespoon olive oil
- 1/2 tablespoon Lemon peel
- 1/8 teaspoon ground black pepper

First, preheat the oven to 375ºF and spray a baking sheet with nonstick cooking spray or line with parchment paper. Put aside.

Next, place raw cashew nuts on the baking sheet and drizzle with maple syrup.

Toss the cashews into the maple syrup, making sure everything is completely covered. Then sprinkle sesame seeds on top and gently toss again. With salt.

Fry at 375ºF for about 10 minutes, stopping to flip at 3, 6, and 9 minutes.

Once your cashews are golden brown, remove them from the oven and let them rest for at least 10 minutes. During this time they will become crispy.

Set the cashews aside for later.

In a medium mixing bowl, combine vinegar, honey, and salt and whisk until honey is dissolved.

Place the sliced English cucumbers in the bowl with the vinegar and toss so that all of the cucumbers are coated in vinegar. Let the cucumbers soak in the vinegar for 10-15 minutes (or overnight).

Next, place the spring salad in a large salad bowl, then add the blueberries, strawberries, red onions, and feta to the bowl. throw ingredients together.

Use a slotted spoon to remove the cucumbers from the vinegar mixture and place in the salad bowl. Save the vinegar mixture for feeding.

Prepare salad dressing by removing 3 tablespoons of the vinegar mixture from the cucumbers and placing them in a small bowl. Add the olive oil, lemon zest, and black pepper to the bowl and whisk together.

Drizzle the dressing over the salad and mix everything together.

Finally, add ½-1 cup of the roasted cashews to the salad and enjoy.
