This soft and chewy Peanut Butter Cup Cookies are made with chocolate pudding mix for the best chocolate flavor and texture ever! Each cookie is placed around a Reese’s Peanut Butter Cup and baked. Easy pudding mix cookies
These divine cookies are soft, chewy, and made with a box of instant chocolate pudding mix. The custard mix adds flavor and moisture to the cookie dough, creating the best soft cookie texture. These are a snap to throw together. Take two balls of dough and sneak a large peanut butter cup in between and combine them into one large cookie covering the Pb cup. If you want smaller cookies, you can use Mini Reese’s Peanut Butter Cups instead!

How to Make Peanut Butter Cup Cookies

Preheat oven + prepare baking sheets
Preheat oven. line 2 cookie sheets B. with silicone baking mats or baking paper. Put aside.

cream butter And Sugar together until light and fluffy. stir in dry pudding mix until well incorporated.

Assemble cookies on pan
using a 1 1/2 tablespoons cookie scoop, scoop 6 biscuits on each prepared cookie sheet. Flatten each cookie a little and above with a whole Reese’s Peanut Butter Cup. Place another Cookie dough scoop Pour onto each peanut butter cup and mold cookie dough around to completely enclose.
Note: For a smaller cookie, use a smaller cookie scoop and Reese Mini Peanut Butter Cups.

Bake for 8-9 minutes or until the cookies have spread and are fully cooked. Cool down for 3 minutes then transfer to the refrigerated section. Serve immediately.



Save + Advance
If you follow these steps, Peanut Butter Cup Cookies will stay delicious and fresh for several days, making them easy to make for any special occasion.
Make sure the cookies have completely cooled to room temperature. Store the cookies in an airtight container with a lid or a ziplock bag and separate the layers with parchment paper to prevent the cookies from sticking together. These cookies stay fresh at room temperature about a week.
Freeze: If you need to keep the cookies longer than a week, you can freeze them in an airtight container Up to 3 months. Thaw the cookies at room temperature before serving.
