How to prepare the Chocolate Honeycomb Toffee

It may look like it’s difficult to make, but it’s actually very easy. You definitely need one cooking thermometer and to follow all recipe steps carefully as you will be working with a very hot dish.

Start by lining a 20cm diameter square baking pan that is at least 6cm deep with parchment paper.

In a large pan Mix water, sugar, dextrose and honey. Heat until the ingredients have dissolved. Put the thermometer in the pan and let the ingredients cook until the temperature reaches 146°C.

Immediately remove the pan from the heat and add the sauce baking powder all at once, stirring at the same time. The mixture will begin to rise very quickly, stop stirring at this point and pour into the prepared pan while it is still bubbly and hot. Allow to cool completely, until the toffee becomes hard like candy, about 2 hours. Remove from the pan, remove the parchment paper and place on a cooling rack. Place a large tray under the cooling rack so you don’t make a big mess when pouring the chocolate.

Melt and temper the dark chocolate. I recommend tempering the chocolate or it won’t cool fast enough and you’ll make a big mess. Pour half of the chocolate over the whole honeycomb, covering the edges too, allow to cool completely, then turn over and pour the remaining chocolate over the bottom. I used Oreo crumbs and slivered almonds for decoration, but feel free to put any sprinkles you have into the kitchen. Now you can cut or break it into pieces. Store in an airtight container at room temperature.

I hope you will try this adorable chocolate honeycomb. If you do, don’t forget to share the photos with me Instagram, because I love to see how this turns out for you. Enjoy!
