Sweet and slightly tart fresh blueberries are lightly coated in dark chocolate for an irresistibly sweet snack that doubles as a quick and easy dessert.

Have you ever had that crazy “aha” moment where you wondered why you hadn’t come up with anything before?
My sister Jenny called me a few days ago and told me that she wanted dessert and there was nothing sweet in her house, so she melted some chocolate chips and poured them over blueberries.
When she couldn’t stop talking about this new treat, I decided I’d better try it right now. She was right, oh so right.
Who knew chocolate covered blueberries would be more tempting than the ever-popular chocolate covered strawberries?

Having made many desserts in the past, I can say that these Chocolate Covered Blueberries are one of the easiest recipes I’ve ever made.
All you have to do is lay out your blueberries, make a simple chocolate sauce and pour it over the berries. Leave the berries to cool in the fridge and you’re done!
And what a delicious contrast! The combination of rich, creamy dark chocolate and sweet, refreshing, slightly tart blueberries is a match made in heaven. Serve these sweets while they’re still a little cold to really bring out the flavor of the berries.
For a slightly more complex flavor, you can also sprinkle the berries with coconut while you let them cool.

Recipe for Chocolate Covered Blueberries
You only need a few ingredients for this easy dessert.
- Fresh blueberries
- Dark chocolate chips
- coconut oil
- Sweetened grated coconut (optional)

First you need to wash the blueberries and dry them completely. Then place 12 muffin cases on a plate or tray. Place 6-8 blueberries in the bottom of each muffin tin, depending on size.
Place the chocolate and coconut oil in a measuring cup or glass bowl. Microwave at 50% power for 90 seconds.
If necessary, stir and heat for an additional 30-60 seconds at 50% power, then stir again to completely dissolve the chocolate.
Make sure your microwave is on 50% power and keep an eye on the chocolate. The smell of burnt chocolate won’t leave your kitchen anytime soon.
If you prefer not to use the microwave, you can also melt the chocolate in a double boiler or glass bowl over a simmering pot of water.

Pour the melted chocolate over the berries. You can easily spread it over the berries with the back of a spoon.
Alternatively, you can add the berries to the bowl with the chocolate, stir and then fill the muffin cases.

Sprinkle with coconut if you like. Place in the fridge for 30 minutes or until the chocolate has set.
Remove from the muffin cases and serve cold. The chocolate covered berries can be stored in an airtight container and refrigerated for up to 3 days.
