I love veggie burgers but always enjoy unique recipes rather than just a plain black bean burger. So instead, I created a chickpea burger recipe with incredible flavor, texture and crunch. Soft on the inside and crunchy on the outside, this chickpea burger recipe can be baked or air fried.

- Poultry Seasoning: All poultry seasonings are vegan despite the word poultry in the name. The main spices are sage, thyme, rosemary, marjoram, nutmeg and onion powder.
- Salt Pepper: Salt and pepper bring natural flavor to the veggie burger mix.
- Aquafaba: Aquafaba is the liquid inside a can of chickpeas and is used as a binder instead of oil in recipes.
- Breadcrumb Mixture: The second mixture combines breadcrumbs, nutritional yeast and garlic salt.
Replace chickpea burger ingredients
- Instead of chickpeas, choose a hearty white bean like lima beans (butter beans) or great northern beans.
- Mix water with Yondu Substitute vegetable broth in this chickpea burger recipe.
- Tamari or liquid amniose is a soy sauce substitute in recipes and is gluten-free.
- Xanthan gum, guar gum, or plain pine protein powder are important wheat gum replacements.
- Make breadcrumbs by toasting bread and grinding it in a food processor or buy breadcrumbs.
- For a great alternative to poultry seasoning, swap 1 tablespoon chicken seasoning for 2 teaspoons sage and 1 teaspoon dried thyme or marjoram. You can swap in any number of dried or fresh herbs you have on hand, as well as mix in the spices. A basic blend of parsley, sage, rosemary and thyme will do the trick.
- Try flax and chia eggs: Instead of aquafaba, mix 1 tablespoon of ground flax or chia with 4 tablespoons of water.
- You can buy seasoned breadcrumbs instead of making a breadcrumb mix.
How to make chickpea burgers

First, mash the chickpeas in a food processor. Do not over pulse. Instead, the chickpea mixture looks crumbly rather than a paste.
Or, if you don’t have a food processor, mash the chickpeas using a fork.

Transfer the mashed chickpeas and all other ingredients to a large bowl. Then, using a fork, combine the ingredients except for the breadcrumb mixture. The breadcrumb mixture is then used to provide a crunchy exterior for the chickpea burger.

Once combined, use a burger press To form burger patties. Or, use your hands to make burgers of the same size.
For a firmer textured chickpea mix, refrigerate until burger patties are made, or make burger patties and refrigerate until ready to cook.

Variety of recipes

- Turn burgers into sliders instead of full size burgers. For sliders, reduce cooking time by one-half.
- To flavor the burger before dredging in breadcrumbs, dip both sides of the chickpea burger patty in your favorite sauce and dredge in the breadcrumb mixture. This time I used buffalo sauce.

- Another idea is to dip teh burger patties in barbecue sauce. However, the burger is moist enough to dredge in breadcrumbs without sauce.

I chose to air fry the burgers for this chickpea burger recipe because it was raining outside. But the oven or grill offers other cooking options.
Air Frying
- Preheat air fryer to 400 degrees.
- Place the chickpea burger patties in a single layer in the air fryer.
- Cook for 15 minutes, flipping halfway through.
- If using a vented air fryer oven, such as a Cuisinart Air FryerAvoid flipping the burger.

- Preheat oven to 400 degrees.
- Prepare a baking pan with parchment paper or a silicone baking mat.
- Place the burger patties in a single layer on the baking sheet.
- Cook for 30 minutes, flipping the patties halfway through cooking.
Grilling
- Preheat grill to 400 degrees.
- Place the burgers on the grill.
- Cover grill and cook for 10 minutes; Flip the burgers over and cook for another 10 minutes.
