Healthy Chickpea Blondies made from everyone’s favorite bean! They’re gluten-free, high in protein, and sweetened with a little maple syrup. Nobody will suspect that they are made from chickpeas! Trust us… we put them to the test!

This chickpea blondies recipe was 100% created for me, just as it was when I started the blog. I just wanted to experiment in my own kitchen and see what happens. Of course I’m thrilled that people are actually reading and making what I share, but I’m learning that what I do won’t be sustainable unless I make myself happy first. I know… what a novel concept! Chickpea blondies or not!
So I know you might be skeptical about a chickpea dessert, but trust me when I say they are GOOD! I tested them on C and my daughter and both devoured them. The taste is clearly a real winner!
ingredients you need
- Canned Chickpeas – Make sure they are flushed and drained. This recipe calls for about 1 1/2 x 14 ounce cans.
- nut butter – I like almond butter for a more traditional “blondie” flavor, but peanut butter or other nut butters will work, too. Use sunflower seed butter if you are allergic to nuts.
- maple syrup – for cuties. You can also substitute with honey.
- vanilla extract – for the taste!
- oatmeal – Whole oats or quick-cooked oats work well. You can also use oatmeal since it’s all going to be ground up in a food processor anyway.
- baking powder – to get up.
- sea-salt – skip if you see sodium but I find it really enhances the flavors.
- egg – that helps to hold everything together. You can try using a flax egg to keep them vegan, but note I haven’t tried it myself.
- chocolate chips or pieces – Don’t skip as they give them a blondie-like flavor!
These chickpea blondes work best when made in a food processor, or if you don’t have one, a high-speed blender will work in a pinch.

Why Use Chickpeas in Baking?
In recent years, beans have become a popular substitute for baking recipes and treats. These chickpea blondies are no exception. For blondies, chickpeas or kidney beans are a great swap. Choose black beans for brownies.
Chickpeas are an amazing source of protein and fiber. They’re also great substitutes for flour when you’re looking for a more nutritious substitute. Don’t knock until you try!
Can you use white beans instead of chickpeas? Absolutely! Simply swap 1:1 for chickpeas to get the same texture. Note: Rinse then drain through a colander like you would with chickpeas.
How to make chickpea blondies
STEP 1: PROCESS WET INGREDIENTS (EXCEPT EGG)
In a food processor, combine chickpeas, nut butter, maple syrup and vanilla.

STEP 2: ADD DRY INGREDIENTS + EGG
Add oatmeal, baking soda, sea salt, and egg. Process until dough comes together smoothly. Should take 1-2 minutes.

STEP 3: ADD CHOCOLATE CHIPS
Stir in the chocolate chips.

STEP 4: ADD TO PAN + BAAKE
Spread the batter into the prepared baking pan, making sure the top is flat to get an even layer. Bake for 20-25 minutes or until golden brown on the edges. Test with a toothpick to see if the center is cooked through. Let cool for 20 minutes before cutting into 12 blondes and removing from pan. Let cool to room temperature on a wire rack.

How to store chickpea blondies
Store leftovers in an airtight container in the refrigerator for up to 3 days.

- 1/2 tsp baking powder
- pinch of sea salt
- 1 egg
- 1/2 cup chocolate chips (or chips)
- Coconut oil, for greasing the pan.
- Preheat oven to 350 degrees F.
- Grease an 8 x 8 inch baking pan with coconut oil or line with parchment paper.
- In a food processor, combine chickpeas, nut butter, maple syrup and vanilla.
- Add oatmeal, baking soda, sea salt, and egg. Process until dough comes together smoothly. Should take 1-2 minutes.
- Stir in the chocolate chips.
- Spread batter in the baking pan, making sure the top is flat.
- Bake for 20-25 minutes or until golden brown on the edges. Test with a toothpick to see if the center is cooked through.
