When I saw this recipe in an issue of Everyday Food, I immediately added bok choy to my shopping list.

This was well received by every family member. It’s amazing how a great sauce can make even my pickiest eaters devour every bite on their plate.

There is almost no heat from the jalapeno in this recipe, it just adds another layer of flavor to the dish. Feel free to increase the amount of jalapeno to your heart’s content.

I often increase the jalapeno because my family loves spicy dishes and a little bit of spice is a great addition to this recipe.

Bok Choi is a mild, slightly sweet Chinese cabbage. The soft green leaves and flavorful crunchy stems add delicious texture and color to this dish.

Stir-fries come together fairly quickly in a skillet over medium-high heat. In this case, I recommend preparing all the ingredients before turning on the stove.

Prepare the sauce by whisking together the soy sauce, vinegar, and brown sugar. Set the sauce aside next to the store.

Cut the chicken thighs into bite-sized pieces and toss with the garlic, ginger, and cornstarch. Chop the bok choy and jalapeno so they are ready to add to the pan.

Sear the chicken mixture in a large skillet. Cook until lightly browned and chicken is just cooked through. It doesn’t need to be fully cooked as it will continue to cook as other ingredients are added.

The ginger and garlic will smell amazing at this point and your kitchen will smell amazing.

Add the bok choy and jalapeno to the pan. Let them cook for about a minute.

The leaves of the bok choy will wilt and soften, but the stalks retain a slightly firm crispness, adding nice texture to the stir-fry.

Pour in the soy sauce mixture and stir to coat the chicken and pak choi.

Cook over medium-high heat for a few more minutes, until the sauce has thickened and everything is nicely coated.

  • cornstarch
  • bok choy

  • In a small bowl, combine soy sauce, vinegar, and brown sugar. Put aside. In a medium bowl, toss the chicken with the garlic, ginger, and cornstarch. Stir or toss to coat.

  • In a large skillet over medium-high heat, heat the oil and add the chicken mixture. Flip to coat and spread the pieces on the bottom of the pan. Sear the pieces, turning as needed. Cook, stirring occasionally, until lightly browned and barely cooked through, about 6-7 minutes.

  • Add the bok choy and jalapeno and continue to cook, tossing with tongs or stirring constantly, until the bok choy collapses, about a minute. Add the soy sauce mixture and mix well to coat. Simmer for about 2 minutes until the sauce thickens. Serve with rice if desired.
