Chewy, gooey blondies recipe that’s gluten-free, low-sugar, and made with whole-food ingredients.

I loved blondies as a kid but skipped making them for my own kids because conventional recipes have such an insane amount of added sugar!
After all these years, I finally had the brilliant idea of replacing half the sugar with mashed, ripe bananas.
The best blondies are chewy and gooey, so banana seemed like the perfect choice for texture, cutting down on the sweetener for a far healthier version.
My gambit paid off… these blondes are incredible. The texture is the same as regular blondies…just a little less sweet with a hint of banana flavor.
I made them with homemade gluten-free flour that I mixed from oats, brown rice, and aramantine flour.
I use flour blends regularly to bring a greater variety of grains into the family. In my experience, dessert is the perfect vehicle for this. Nobody ever notices!

Gluten free blondies

Preheat the oven to 120°C.

Melt the butter in a small saucepan on the stove over low heat.

Whisk together the egg and yolk in a small bowl.

In a large bowl, mash ripe bananas until very smooth and free of lumps.

Mix the sucanat, melted butter, beaten egg/yolk and vanilla with the mashed banana until well combined.

Mix flour, baking powder and sea salt in a separate bowl.

Slowly add the flour mixture to the bowl with the banana mixture until fully combined.

Pour the batter into a greased 9×9 or 8×8 baking pan.

Bake for 25 minutes and remove from the oven immediately. A knife inserted into the middle of the blondes should come out mostly clean with a few bits on the end. This is important for the blondies to be chewy and sticky.

Let cool, cut into squares and serve.

Refrigerate leftovers in a container with a tight-fitting lid.
