- Vinegar – I gave my cherry tomato salad, a sour, acidic flavor ‘mother’ using an organic apple cider vinegar. It is simply the kind that is raw, unrefined and unrefined apple cider vinegar.
The ‘mother’ here is the gut-friendly bacteria that is actually used when making apple cider vinegar, but is removed in many packaged apple cider vinegars because they give a cloudy appearance. Check it out online or in store, you’ll find it. However, you can use red wine vinegar or balsamic vinegar instead.
- Sweetener – A little bit of raw sugar to balance the sourness and make it harmonious in the salad. You can skip adding it or use other substitutes like honey, palm or coconut sugar.
- garlic – I always go for garlic. So use it in this recipe too. It gives a slight tanginess to the salad.
Step by step guide
How to Make Cherry Tomato Salad
Prepare the tomatoes and make the salad dressing
1. Wash 200 grams of cherry tomatoes well. Discard all the water and keep the tomatoes for a few minutes so that they dry naturally.
You can spread the tomatoes on a tray or board to dry. You can even wipe the tomatoes with a clean cotton napkin.
Usually, I wash the tomatoes an hour before and then spread them on a plate. When the water dries up, I cover it with a lid and keep it in a container.

2. Halve the cherry tomatoes that are larger in size and leave the smaller ones intact.

3. In a mixing bowl, take 1 tablespoon of extra virgin olive oil and 2 teaspoons of apple cider vinegar. You can use red wine vinegar, balsamic vinegar or white vinegar instead.

4. Sprinkle with ½ teaspoon dried basil and ½ teaspoon dried parsley. You can even add ½ tablespoon chopped fresh basil and ½ tablespoon chopped fresh parsley.
Add ¼ teaspoon sugar or add as needed and ¼ teaspoon ground black pepper or black pepper powder.
Also season with ¼ teaspoon salt or to taste.

5. Add 1 small peeled garlic clove that has been minced or crushed.

6. Rub quickly so that the spices, herbs, oil, sugar, salt and vinegar are evenly mixed.

Make the cherry tomato salad
7. Add half the cherry tomatoes.

8. Toss and mix so the dressing coats the cherry tomatoes.

9. Serve the cherry tomato salad immediately. Salads, especially tomato salad, are served fresh. If you are unable to do this, refrigerate for 1 to 2 hours and then serve.
However, upon refrigeration, the flavor of the salad changes. When serving, you can even add some grated vegan parmesan cheese.

- Cherry tomatoes can be substituted with small tomatoes or grape tomatoes. You can also use regular tomatoes, but cut them into small cubes.
- The amount of herbs can be increased or decreased as per your preference. You can add herbs of your choice.
- Add spices of your choice. I like black pepper, but you can add white pepper, cayenne pepper, ground cumin, or whatever spices you like.
- You can skip adding sugar altogether. Use other sweeteners such as coconut sugar, palm sugar and honey instead of regular sugar.
- Olive oil is essential in this recipe, so don’t swap it for any other oil.
