As a mother of two boys and wife to a man who loves meat and potatoes, few meals are as successful as meatloaf. For years I’ve given up the traditional bread pan and prefer to make my meatloaf in a 12-cup muffin pan. Not only is it more fun to eat something in muffin form, it cooks in 1/3 the time! In fact, these Cheeseburger Meatloaf Muffins are ready in just 15 minutes. As an added bonus, these meatloaf muffin cups are naturally gluten-free, high-protein, and low-carb.

Ingredients

  • ground beef: I like to use a ground sirloin, but ground chuck or even ground turkey would also work.
  • Garlic: Nutty, bold, aromatic flavor that goes with almost anything.
  • Sun-Dried Tomatoes: Gives the meatloaf a wonderfully tart, sour taste.
  • BBQ seasoning: Typically a mixture of salt, pepper, garlic powder, onion powder, and sometimes warm spices like chili powder and cumin.
  • Parmesan cheese: To keep this dish gluten-free, the Parmesan cheese both adds flavor and acts as a binder to hold the meatloaf together.
  • Green olives: Salty, spicy and sometimes nutty taste.
  • Worcester sauce: Hot, savory and sweet, it gives the meatloaf a great tangy flavor reminiscent of a burger.
  • Parsely: Fresh parsley gives the beef a wonderfully clean and peppery flavor.
  • Ketchup: The classic sauce for a meatloaf, as well as a classic condiment for a burger!
  • Dijon: Mixed with the ketchup, it refines the typical sauce and gives it a sharp taste.
  • Cheddar cheese: Classic cheese flavor for a cheeseburger, melts on top of the meatloaf for wonderful flavor.

How to make Cheeseburger Meatloaf Muffins

Ground beef in the bowl

To make your cheeseburger meatloaf muffins, start by adding your ground beef to a large bowl.

Grate the garlic into the bowl

Then use a micro-slicer to rub your garlic cloves into the ground beef.

Spices added to meat

Add the chopped sundried tomatoes and grill seasoning.

Add Worcestershire sauce

Then drizzle over the Worcestershire sauce.

Put parmesan cheese in the bowl

Next add the parmesan cheese.

Add olives to meat

And your chopped green olives.

Any spices added to the meat

Finish off with some salt and pepper and the fresh parsley,

Then use the best blending tool you have to blend everything together: your hands!

Pour the meatloaf mixture into the muffin tin

Once all the ingredients are evenly incorporated, fill a prepared muffin tin with the meat mixture.

Mix mustard with kethcup

Then, in a small bowl, mix together the ketchup and Dijon mustard.

Spread sauce on meatloaf muffins

Spread the sauce over the top of each meatloaf muffin.

Sprinkle cheese on meatloaf muffins

Then sprinkle the shredded cheddar cheese over the top of each muffin and toss in the oven at 350 for about 15 minutes or until cooked through.

Allow to cool and remove from the muffin pan, serve garnished with extra parsley and enjoy your Cheeseburger Meatloaf Muffins!

  • Preheat the oven to 350 degrees and have an Analon non-stick muffin pan ready.
  • In a large bowl, mix the first 8 ingredients (beef through parsley) with your hands until evenly incorporated. Divide the mixture evenly among 12 muffin tins and shape into small loaves.

  • Mix ketchup and mustard in a small bowl. Brush each meatloaf bowl evenly with sauce. Sprinkle each cup evenly with shredded cheese before baking in the oven for 15 minutes or until cooked through.
