Healthy oatmeal ingredients for carrot cake
Here’s everything you need: rolled oats, cinnamon, yogurt, your choice of sweetener and milk, a pinch of salt, and grated carrots.
For vegan carrot cake oatmeal, use non-dairy yogurt and plant-based milk. The recipe can also be low-fat, low-calorie, and gluten-free.
I like to stir in about a tablespoon of softened coconut butter for richness or almond butter for extra protein.
Sometimes I even add a spoonful of homemade Nutella.
If you only have quick oatmeal on hand, those will do as well. I haven’t tried this oatmeal recipe with steel oats, so I have no idea how this substitute might work.
The carrots can be either large carrots or baby carrots. Feel free to go with orange, yellow, or purple carrots.

How to make carrot cake oatmeal overnight
Peel the carrots if they are not already peeled. Chop with a vegetable peeler or in a food processor. I like to use the food processor to shred carrots because I find it’s a lot easier and quicker than doing it by hand.
For the carrot oatmeal, mix all the ingredients in a glass. Shake the jar very well, then cover tightly with a lid and refrigerate overnight.
The oatmeal will soak up all the liquid while it sits, and this thick carrot cake breakfast is ready to eat the next morning.
Enjoy cold, or you can reheat the carrot oatmeal in the microwave or on the stovetop. The recipe makes one serving.

- 1/2 Cup oatmeal
- 1/2 tsp Cinammon
- 1/8 tsp Salt
- 2 – 3 TBSP grated carrots
- 1/2 Cup Natural yoghurt of your choice
- 1/2 Cup milk of your choice
- 1 tablespoon almond or coconut butter, Optional
- sweetener of your choice to taste (amount depends on your taste buds and whether or not you use sweetened milk and yogurt)
- optional add-ins, such as raisins, grated coconut, chia seeds or chopped walnuts
