We love muesli in our house. It’s one of our favorite snacks on hand! It’s nutritious, filling and perfect to enjoy over a bowl of yogurt or simply by handful. If you’ve never made homemade granola before, it’s time to start! It’s so easy.. just stir and bake! And it’s so much better than store bought. Once you’ve tried homemade granola, you’ll never go back! Not only is it super easy and totally delicious, but you can customize the ingredients and control what goes into it.

This Carrot Cake Granola is still one of our favorite creations to date. It’s super crunchy and loaded with all those warm spices that make carrot cake so delicious. We’ve filled it with nuts, carrots and coconut – so not only is it delicious, it’s also filling and nutritious. Not to mention that it’s totally addicting. For example, eat half the pan before it becomes addictive.

Ingredients for carrot cake granola

  • Oats– For this recipe you use regular rolled oats.
  • carrots– We used a fine grater to shred the carrots and then used paper towels to remove excess moisture.
  • pecans– Almonds or walnuts are also delicious!
  • coconut– We used shredded coconut and coconut chips – both work great.
  • maple syrup– We love using maple syrup in granola, but you can use honey too.
  • Cinammon
  • nutmeg
  • Salt
  • coconut oil– Coconut oil is so delicious in this granola, but any neutral-flavored oil will do here.

How to make carrot cake granola

  1. Combine all your dry ingredients in a large mixing bowl.
  2. Melt the coconut oil in a small bowl. Stir in the maple syrup. Stir in the grated carrots.
  3. Pour over the oat mixture and stir to combine.
  4. Distribute the granola on a baking sheet lined with parchment paper. Bake at 350 degrees for 20 minutes or until golden brown, stirring once during baking. It’s still slightly soft to the touch, but will crisp up as it cools.
  5. Cool down completely in an airtight container before storing. It will be good for up to a month.

How long can you store homemade muesli?

Store homemade granola in an airtight container at room temperature for up to 1 month. For longer storage, store in the freezer for 3-6 months.

How do I serve Carrot Cake Granola?

We prefer to enjoy this muesli on Greek vanilla yoghurt! Eat it plain or add some fresh fruit like fresh berries or sliced ​​bananas. Some other ways to enjoy granola are:

  • on smoothie bowls
  • sprinkled with nut buttered apple wedges
  • in a bowl with milk
  • wrapped in a tortilla spread with cream cheese or nut butter
  • Stir into muffins or quick breads before baking
  • sprinkled on toast
  • as a pancake topping; before or after cooking!
  • on cottage cheese
  • as a salad topper
  • stirred into cookie dough
  • Added trail mix

Why isn’t my muesli crispy?

If your granola isn’t crispy, add an additional 5 minutes to the baking time. Be careful to avoid overcooking. You can also try cooking your cereal at a lower temperature for a longer period of time. Bake your granola mix at 275 degrees for 50-60 minutes.

Can I add anything else to my Carrot Cake Granola?

Yes! We love enhancing the nutritional value and flavor of our muesli with additional ingredients. Some of our favorite additions are hemp seeds, flax flour, chia seeds, or dried fruits like raisins or crushed banana chips.

  • 2 cups oatmeal
  • 2 teaspoon Cinammon
  • 1/8 teaspoon nutmeg
  • 1/2 teaspoon Salt
  • 1/3 Cup coconut flakes
  • 1/2 Cup Pecans, chopped Optional
  • 1/3 Cup pure maple syrup
  • 1/4 Cup coconut oil melted
  • 1 Middle carrot peeled and finely grated 1/2 cup
  • Preheat oven to 350 degrees and line a sheet pan with parchment paper.

  • In a medium mixing bowl, combine rolled oats, cinnamon, nutmeg, salt, baking soda, coconut flakes, and chopped pecans, if using.

  • In a small mixing bowl, whisk together the maple syrup and melted coconut oil. Stir in the grated carrot. Pour into the oat mixture and stir.

  • Spread onto the prepared baking sheet and bake for 20 minutes, stirring halfway through. You want the pieces underneath to stir up and cook evenly. You’ll know it’s done when it starts to look golden brown and the carrots are slightly dried. It will feel a little wet when it comes out of the oven, but will crisp up as it cools.

  • Allow to cool completely, then store in an airtight container at room temperature. It stays good for up to 1 month. Enjoy!
