How to Make Carrot Cake Bites

Start preparing the carrot cake. Line a 20 cm square baking tin with parchment paper. Preheat the oven to 350F (180C). Mix oil, sugar and eggs in a large bowl. Add all dry ingredients and mix until combined. Finally add the grated carrots. Pour the batter into the prepared pan and bake for about 25 minutes, or until an inserted toothpick comes out clean. Remove the cake from the oven and let the cake cool completely.

In the meantime, prepare these Cream Cheese Frosting. In a large bowl, whisk together the cream cheese, powdered sugar, and vanilla until stiff peaks form.

Use a 3.5 cm diameter round cutter to cut out cake circles. Transfer them to a serving platter.

Fill the cream cheese frosting into a piping bag fitted with a star nozzle. Carefully pipe the cream filling onto each mini cake.

For decoration you can use Easter sprinkles, chocolate eggs, fresh fruit, nuts or almonds.

Ingredients

  • 5 tablespoon (70 ml) vegetable oil
  • 3/4 1 cup (150 g) brown sugar
  • 3/4 Cup (95 g) all-purpose flour
  • 1/4 tsp (1g) salt
  • 1/2 tsp (1.5 g) cinnamon powder
  • 1/2 tsp (1.5g) nutmeg powder
  • 1/3 tsp (1.5 g) baking powder
  • 1/4 tsp (1.5 g) baking powder
  • 1 Cup (170 g) grated carrots

Cream Cheese Frosting

  • 12 oz (360 g) cream cheese
  • 1/2 Cup (60 g) powdered sugar
  • 1 tsp (5g) Vanilla Extract

For decoration

  • Chocolate eggs, nuts, sprinkles
