Notes on ingredients
cabbage Small heads of cabbage work best here – they keep their shape and look better on the plate. Use purple or green; As you wish. Red cabbage contains more polyphenols, so I opt for them.
Spices- Here we’ve kept it simple with smoked paprika and garlic powder. But other seasonings work well too, cajun seasoning, taco seasoning, zaatar, furikake, etc.
How to make cabbage steaks

First, cut off an inch of the stalk end of the cabbage (and save this for coleslaw, salad, soup, or broth). Further cut the cabbage into 1-inch slices. A small cabbage yields three slices.
I usually eat two slices, but my husband can eat three or more slices, and leftovers can be reheated, so I always make two cabbages. They always get eaten.

Place on a parchment lined sheet pan. Brush both sides with olive oil and season both sides with salt, pepper, garlic powder, smoked paprika and optional chili flakes. Sprinkle with lemon zest, which will crisp up in the oven.

Roast in a 400F oven for 20 minutes on the middle rack.

Use sauces to elevate!
While the cabbage is roasting, prepare a sauce. Try this pickled pepper vinaigrette or make gremolata—both will work great here.

Here we opted for Creamy Polenta and the Red Pepper Vinaigrette. Such a great combo! My husband loves these with our garlic puree.

- Preheat oven to 400F
- Cut the stem end off the cabbage, about 1 inch (2.5 cm) from the bottom. Continue in this direction, cutting 1 inch slices. You should have 3 per cabbage. Save the ends and tips for another use – coleslaw, salads or broth.
- Place the cabbage on a baking tray lined with baking paper (prettier side down). Brush generously with olive oil, sprinkle generously with salt, pepper, smoked paprika, garlic and chilli flakes. Gently turn them over and repeat olive oil, salt pepper, smoked paprika, garlic and chili flakes. Sprinkle with the lemon zest. Save the leftover oil for touch-ups.
- Roast on the middle shelf for 20 minutes, check and continue baking if necessary until the middle is soft.
- While the cabbage steaks are roasting, prepare the sauce and side dish (we used creamy polenta here).
- To Serve: Place the creamy polenta in a wide, shallow bowl and carefully top with a cabbage steak; If it looks dry, brush with a little more olive oil, sprinkle with fresh parsley and spoon the sauce over and around the cabbage steaks. Serve with a knife and fork.

Which Cabbage Works Best?
Little cabbages look better on the plate and hold together – better than large heads of cabbage. The “steaks” are more compact. You can use purple or green – I prefer purple because they contain more nutrients.
