Busy Day Cake is the perfect dessert when you want a delicious dessert but want it to be easy to make. Oh, and this cake is made without eggs! So no eggs…No problem! It’s just a few simple ingredients and it’s that good. It’s a snack cake, meaning it’s made in an 8X8 and is great when you don’t need a big dessert.
Ingredients needed for a busy day cake:
butter, soft
Brown sugar
buttermilk
baking powder
all purpose flour
vanilla extract
Topping Ingredients:
butter, soft
Brown sugar
milk
Shredded Sweetened Coconut
vanilla extract
pecans
Recipe Notes:
- Of course, you can omit the frosting from this cake and dust it with powdered sugar or whipped cream. But I think it’s much better with the frosting.
- You could just use walnuts instead of pecans in the frosting.
- You could probably easily double this dessert. However, you have to pay attention to the baking time.

Busy day cake
This cake is so easy! It doesn’t even need eggs. It will be a family favourite!
Servings: 8th portions
- 1/4 Cup butter softened
- 1 Cup Brown sugar
- 1 Cup buttermilk
- 1 teaspoon baking powder
- 1 1/2 cups all purpose flour
- 1 teaspoon vanilla extract
topping ingredients
- 3 tablespoon butter softened
- 1/2 Cup Brown sugar
- 2 tablespoon milk
- 1/2 Cup crushed sweetened coconut
- 1 teaspoon vanilla extract
- 1/2 Cup pecans
Cake instructions:

Cream the butter and sugar with a mixer. Add buttermilk and vanilla extract. Whisk together the baking soda and flour and add to the other ingredients. Keep mixing until all ingredients are moist.

Spray an 8 x 8 baking pan and add batter. Bake in a preheated 375 degree oven for 30 minutes or until mid tests are done. Add the topping while the cake is still warm.
Topping Instructions:

Mix soft butter, sugar and milk with a spoon. Add coconut and vanilla extract. Spread on the cake. Scatter pecans on top. Place the pie under the broiler for about a minute, or until the topping is bubbling.
