I don’t know about you, but I love buffalo sauce and potatoes, so I made these quick and easy buffalo potatoes to serve as a side dish with chickpea burgers the other night and they were a hit. Although there are multiple claims to fame as to who invented buffalo sauce, the credit usually goes to Teresa Bellissimo.A Buffalo, New York bar owner, for inventing buffalo wings at Anchor Bar in 1964.
Traditionally buffalo sauce is made with a cayenne-based hot sauce, melted butter and vinegar is the ideal base for buffalo wing sauce, which can be served mild, medium or hot. Other ingredients, though less dominant, are also common, such as Worcestershire sauce and garlic powder.
However, over the years, many vegetarian buffalo sauces have hit the shelves, making it easier for plant-based eaters to enjoy buffalo-flavored foods.
And, in today’s world, buffalo doesn’t necessarily mean hot. Now, buffalo sauce comes in mild, medium and spicy options.
Vegan Friendly Buffalo Sauce Brand
Although I sometimes make homemade buffalo sauce for buffalo cauliflower, which is oil-free, I chose a store-bought bottled version to make this buffalo potato recipe. Although there are vegan options, check the label if you don’t use oil.
- Frank’s Red Hot Buffalo Sauce: This sauce contains canola oil, so if you follow a whole foods plant-based diet, skip it.
- Primal Kitchen Buffalo Sauce: This brand has mild, medium and spicy options. But it also contains olive oil, so skip it if you’re following a whole-food, plant-based plan.
- Yellow Bird Wing Sauce: This sauce is organic, vegetarian and oil-free. I have every taste and love this brand. It is made in Austin, Texas.
Buffalo potato ingredients

- Baby potatoes: New potatoes, also called baby potatoes, are peeled from the ground before they are fully mature. Commercial growers sometimes harvest young potatoes, allowing other potatoes to grow underground.
- Buffalo Sauce: Choose a vegetarian buffalo sauce.
- Green Onion: Green onions are mild in flavor and add flavor to buffalo potato recipes.
- Vegan Ranch Dressing: I make vegan ranch dressing, or you can buy bottled vegan ranch dressing.
Substitute buffalo potato ingredients
- Choose any potato; Just cut into equal sizes, so they cook evenly.
- Make homemade buffalo sauce, or choose a vegan brand that meets your plant-based plan.
- Chives are an excellent substitute for green onions.
- If you don’t like ranch dressing, try vegan blue cheese dressing, which is great with buffalo potatoes.
- Or skip the drizzle of dressing and eat the potatoes without any ranch or blue cheese.
How to make buffalo potatoes

First boil the potatoes for 4 minutes. This makes the potatoes soft and porous, so they absorb the buffalo sauce.
Then, toss the boiled potatoes with half of the buffalo sauce and refrigerate for a few hours or overnight for best flavor.

Spread the potatoes evenly in a single layer on a baking sheet lined with parchment paper or a silicone baking mat. Or, if air frying, place in a single layer in an air fryer pan.

- Preheat oven to 400 degrees.
- Cook the potatoes for 35 minutes.
- Halfway through cooking, flip the potatoes with a spatula.
- Remove from oven.
- Transfer to a bowl and add remaining buffalo sauce; coat toss
- Sprinkle with green onions.
- Drizzle with ranch dressing.
And frying
- Preheat air fryer to 400 degrees.
- Cook potatoes in a single layer for 15-17 minutes, flipping and tossing halfway through.
- Air fry until the potatoes are golden brown and crisp on the outside and tender when pierced with a fork.
- Transfer to a bowl and add remaining buffalo sauce; coat toss
- Sprinkle with green onions.
- Drizzle with ranch dressing.
