Quesadillas are one of those stretched meals or snacks around our house. Don’t we all have these times? When you know you NEED to go to the grocery store but don’t have the time or inclination to compile a to-go list. We’ve all been there.

Cheese and tortillas are never in short supply in my kitchen, which is why they’re so easy to make.

Buffalo Chicken Quesadillas are a great way to use up a small amount of leftover chicken. When making quesadillas, a little bit of chicken can go a long way.

Shredded or chopped chicken with buffalo sauce and lots of cheese sandwiched between some crunchy buttered tortillas? I like to call this lunch every day of the week.

Any type of cooked chicken can be used for this recipe. Grilled chicken thighs, fried chicken, fried chicken, and shredded chicken will all work well.

If you don’t have any spare chicken or just don’t feel like cooking the chicken yourself, my first choice for this type of recipe is often rotisserie chicken.

Buffalo Chicken Quesadilla with uncooked chicken and cheese

My quesadilla technique is super easy. Butter the tortillas first, not the pan. Second, use two layers of cheese.

That’s right, bottom tortilla + cheese + buffalo chicken + more cheese + top tortilla. You can’t go wrong and the cheese holds it all together nicely.

Once cooked, skip the plate and simply serve the Buffalo Chicken Quesadilla on your cutting board. Cutting a hot quesadilla into manageable pieces is easy with a pizza cutter or large knife.

Place the quesadilla on a cutting board and run a pizza wheel cutter over it. Or grab your big chef’s knife and swing over it in one quick motion to slice.

Serve your buffalo chicken quesadillas with a side of celery and bleu cheese dressing. My crew usually dips them in homemade ranch dressing because I know I’ve already done that in the fridge

Buffalo Chicken Quesadillas recipe

For this recipe you need the following ingredients:

  • butter
  • flour tortillas
  • Shredded Cheese: Cheddar, Colby Jack, Pepper Jack, or Mexican Cheese Blend
  • boiled chicken
  • Frank’s Buffalo Wing Sauce, whichever flavor you like best
  • Blue cheese, ranch, or sour cream for serving

Buffalo Chicken Quesadilla Recipe

  1. Preheat a large non-stick skillet to medium-high heat. Lightly butter one side of two tortillas with about 1/2 teaspoon butter.
  2. In a medium bowl, mix the chopped chicken with buffalo sauce. Place a tortilla, buttered side down, in a hot skillet over medium-high heat. Layer half the cheese, shredded chicken, and remaining cheese onto the tortilla. Place the second tortilla on top and cook for a minute or two.
  3. When the cheese melts and the tortilla facing the pan begins to brown, use a large spatula to gently flip the tortilla and cook on the second side for a few minutes.
  4. After everything has melted together and the tortillas are golden and crispy, remove the buffalo chicken quesadilla from the pan and cut into wedges. Serve warm with a dip of your choice.
