Brownie Bites – Lauren’s latest

Miniature everything has my heart, and this mini Brownie Bites are no different! Chewy, warm and moist brownies with vanilla ice cream, fresh berries or even on their own are the perfect dessert for every occasion. They are similar to my classic brownies and smaller! A note on baking chocolate

When chocolate is the main ingredient in your dessert, I firmly believe in GO BIG OR GO HOME. I strongly recommend looking for it best baking chocolate You can find. The higher quality the chocolate, the more decadent, rich and delicious it becomes. Ghirardelli and Scharffen Berger are great brands.

Bittersweet chocolate substitute

If you need a good substitute for bittersweet chocolate, you can add 1 tbsp cocoa powder1 tbsp granulated sugar and 2 tsp butter for every ounce of bittersweet chocolate that you replaced

If you don’t have bittersweet chocolate and you are in need, you can use this one Dark chocolate.

What kind of pan should I use?

I used one for these mini brownies Mini muffin tin that has 24 mini muffin wells. There are mini brownie pans you can find on Amazon but I just used what I had and they turned out great! I now have round brownie bites instead of square ones! 😉

Ingredients for brownie bites

Preheat oven + prepare muffin tin

Preheat oven. Spray lightly 24 mini muffin pans with Nonstick Cooking Spray and set aside.

Make the dough

Melt butter And bittersweet chocolate above medium to low heat. Remove from the stove and stir in Sugar.

stir in Vanilla And egg. Add up everything dry ingredients and mix slowly to incorporate.

Spoon in evenly prepared pan and bake. Allow to cool, remove and top with ice cream or fresh berries. Add sprinkles or other toppings of your choice and serve immediately.

What can I serve this with?

Serve these mini brownies warm and top with store-bought ice cream or make your own. I have a great recipe for homemade vanilla ice cream. Fresh berries, chopped nuts, and whipped cream also go great with brownies!

How to store brownies

Store leftover brownie bites (if you have any left!) in an airtight container with a lid. At room temperature they stay fresh for 2-3 days. If you want to extend the freshness for a few more days, put a piece of bread in the container.

Freeze: If you decide to freeze these brownies, allow them to cool completely before placing in an airtight container or bag and removing excess air. Brownies stay fresh in the freezer for 2-3 months. Place in refrigerator overnight to thaw.
