Ingredients
- 3/4 Cup unsalted butter
- 3/4 Cup Dutch Process Cocoa Powder
- 1 teaspoon vanilla extract
- 1 3/4 Cup packaged light brown sugar
- 3 Big Eggs
- 3/4 Cup all purpose flour
- 1/2 teaspoon Salt
instructions
- Preheat oven to 350°F. Grease an 8″ x 8″ pan, line all sides with parchment paper, and set aside.
- Put the butter in a small saucepan and heat over medium-high heat. Low heat is the key to an even, golden tan! Use a silicone spatula to stir and scrape the butter off the bottom and sides of the pan every 10 to 15 seconds. First the butter melts and froths, then over time the foam bubbles shrink and the butter begins to give off a warm, nutty aroma. Continue cooking the butter, stirring occasionally and scraping with the spatula, until the butter begins to color and you see small floating brown bits, about 10 to 15 minutes (these are the milk solids in your butter that will separate and toast) . Once the butter is golden brown, remove it from the heat.
- Add the cocoa powder and vanilla to the browned butter and mix until there are no lumps of cocoa left.
- In a stand mixer fitted with the whisk attachment, beat the eggs and brown sugar until light, fluffy and pale.
- Add the butter mixture to the egg mixture and fold in with a rubber spatula.
- Finally add the flour and salt and fold in the mixture until there are no more streaks of flour.
- Transfer the mixture to the prepared baking pan and bake for about 25 minutes. Test doneness by sticking a knife in the center of the brownies, starting at 20 minutes. You’ll know they’re done when the edge is set, but a knife inserted in the center still comes out with some brownie batter on it. Depending on your oven, they can take up to 35 minutes to cook through!
