This cheesy scalloped potato and sausage recipe makes a hearty meal and we all love it. I serve it with my Southern Cornmeal Hoecakes. Leftovers can be reheated and will keep in the fridge for several days. You can also halve this recipe.
Scalloped Potatoes and Sausage Ingredients needed:
Smoked Sausage (could use polish), sliced
potatoes
Green pepper
Onion
Colby Jack Cheese
milk
sour cream
butter or 1/2 stick or 1/4 cup
Salt
Black pepper
garlic powder
all purpose flour
Cheddar cheese
paprika
parsley for garnish (optional)
As you can see, this dish is made with only simple ingredients, but it’s packed with flavor! You can always use andouille sausage to give this dish a little extra spiciness. You can also use smoked turkey sausage! It’s very versatile and so good. You can always mix the cheeses if you prefer a different flavor.
Note that cooking time will vary depending on the depth of your dish and how thinly you slice your potatoes. I did this in a 9X13 and it took about an hour. I cooked it in a 2 liter dish and it took an hour and 20 minutes. So be sure to check if your potatoes are cooked through.

Cheesy scalloped potatoes and sausage
This recipe for Cheesy Scalloped Potatoes and Sausage is a truly hearty meal.
- 1 Pound Pack of smoked sausage (could use polish, cut in rounds)
- 7 to 8 medium-sized potatoes, peeled and sliced
- 1 green pepper cored and roughly chopped
- 1 big onion peeled and chopped
- 1 8-ounce packet Colby Jack Cheese, diced (can use any variety you like)
- 1 Cup milk
- 1 Cup sour cream
- 4 tablespoon butter or 1/2 stick or 1/4 cup
- 1 teaspoon Salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 3 tablespoon all purpose flour
- 1 Cup grated cheddar cheese (can use any style you like)
- 1-2 tablespoon paprika
- fresh parsley for garnish (Optional)

In a large mixing bowl, slice the sausage, peel and slice the potatoes, chopped green peppers, and chopped onion. Throw to mix

Spray a 9 x 13 casserole dish with cooking spray and pour in the potato sausage mixture. Scatter cheese cubes on top.

In a saucepan on the stove, combine the milk, sour cream, butter, salt, pepper, garlic powder, and flour. Over low heat, melt the ingredients, stirring with a whisk, until the mixture thickens and is smooth. NOT COOK.

Remove from heat and pour over potatoes and sausage. Sprinkle grated cheddar cheese on top. Scatter the peppers over the cheese. Cover with foil and bake in the preheated 375 degree oven for 35 to 40 minutes or until potatoes are tender when poked with a fork. Remove foil and bake for a further 15 minutes until the surface begins to brown. Remove from the oven and garnish with fresh parsley.
