When it comes to savory breakfast options, I’ve got everything covered from breakfast casseroles to breakfast sliders. They are all delicious and feature frequently on our breakfast table and occasionally on the dinner table. So I wasn’t exactly looking for another twist when I stumbled upon this humble cake.
But boy am I glad I did.
The ingredients are pretty standard when it comes to breakfast: eggs, sausage, cheese. However, the taste and texture of this breakfast pizza is not uniform at all. The deliciously chewy, homemade dough, soft scrambled eggs, and savory toppings just come together perfectly…all with the awesome hand portability of a slice of pizza. In the sense of “I’m completely full, but maybe just a little more” type. Or the “Hey, what happened to the rest of the breakfast pizza?” kind of way. I think you got the idea. Make that pizza. You will not regret it.

Ingredients you need for this breakfast pizza
5 Minute Pizza Base:
- Flour– For this recipe we use regular all-purpose flour.
- parmesan cheese– We like to use freshly grated parmesan.
- Water
- Yeast– You need high-speed yeast for this quick and easy pizza dough!
- olive oil– Any oil with a neutral flavor will work.
- Sugar– Some sugar helps to activate the yeast.
- Salt
Pizza topping:
- Ground Sausage– We used regular ground sausage. You can also use breakfast sausage, hot or sweet minced meat.
- eggs
- paprika– Paprika provides some sweetness and some crunch. Use any color available.
- milk– We used 2% milk.
- mozzarella cheese– Partially skimmed mozzarella cheese is creamy and melts easily.
- Cheddar cheese– Cheddar cheese adds a nice, sharp flavor to the pizza.
- butter
- Flour
- salt pepper


Here’s how to make this easy 5-minute pizza dough:
- activate yeast. In a small bowl or liquid measuring cup, combine the water, sugar, oil, and yeast. Whisk to combine. Set aside and let the mixture foam up.
- Mix the dry ingredients together. Place the flour, Parmesan cheese, and salt in the bowl of a stand mixer. Pulse to combine.
- Add the liquid and make your batter. With the food processor running, slowly pour in the yeast mixture. Continue processing until the mixture comes together and forms a shaggy ball. This can take about a minute.
- Roll out the dough. Place the dough on a lightly floured surface. Knead a few times to form a ball of dough. Halve the dough. Roll out the dough quickly to form a circle about 27 cm in diameter. Carefully place the dough on a parchment-lined baking sheet or pizza pan.

How to prepare this breakfast pizza:
- Roll out the pizza dough. Divide the dough in half and roll out into two even circles. Place the dough on two pizza trays or baking trays lined with baking paper.
- Boil the sausage. Heat a large skillet over medium-high heat. Add the ground sausage and cook, stirring frequently and breaking the sausage into pieces. Once the mixture is cooked, add the diced peppers and cook for a few more minutes until tender. Place on a plate lined with kitchen paper and set the plate aside.
- Boil the eggs. In the same pan, melt the butter over medium heat. Add the flour and stir. Slowly pour in the milk and continue stirring until slightly thickened. Stir in salt and pepper. Put the eggs in the pan and stir. Cook until the eggs are soft – they will then continue to cook in the oven.
- Top the pizza. Spread all the ingredients on the two pizza bases, brush each with the egg mixture and then top with the sausage and pepper mixture. Finally add both cheeses.
- Bake. Bake in 475 degree oven until topping is browned and bubbly.
- Slice and enjoy!

tips and suggestions
Avoid overcooking the eggs. The eggs will continue to cook in the oven, so resist the temptation to fully cook them on the stovetop. You want a soft-boiled egg that will reach the perfect consistency in the oven. Cooking them too long beforehand will result in gummy eggs.
Try swapping out the pizza dough. This dough recipe is really quick and easy, but if you’re short on time, try using store-bought pizza dough or pre-baked pizza crusts. You can also make smaller, custom-sized breakfast pizzas from tortillas or Greek flatbread.
Meat substitute ideas: Instead of ground sausage, try cooked bacon, diced ham, or fried chicken.
Experiment with different toppings. Breakfast pizza is almost as customizable as regular pizza! Here are some more delicious topping ideas:

- 16 ounces ground sausage
- 1 1/2 cups paprika rolled
- 3 tablespoon butter
- 3 tablespoon Flour
- 1 Cup milk
- 6 large eggs
- 1/2 teaspoon Salt
- 1/2 teaspoon freshly ground black pepper
- 1 Cup Cheddar cheese shredded
- 1 Cup mozzarella cheese shredded

Preheat oven to 475℉. Prepare pizza dough and set aside to rise.

Place the ground sausage in a large skillet and grind with a meat grinder or spatula. When the sausage is mostly done, add the diced peppers. Saute for about 2-3 minutes, until sausage is tender or until sausage is cooked through. Place the sausage mixture on a plate lined with kitchen paper. Pat to remove excess fat.

In the same pan, add butter and flour and stir over medium heat. Once everything is well combined, slowly pour in the milk, stirring constantly. Add salt and pepper and stir. Cook for 3-5 minutes or until the sauce starts to thicken. Crack the eggs into the sauce and stir. Cook until the eggs have a soft consistency. Don’t overcook or the eggs will be gummy!

Roll your pizza dough into two rounds and top with the egg mixture and then the sausage mixture. Distribute them evenly and then top with both types of cheese.
