Red miso paste can be found in Japanese grocery stores and in the refrigerated produce section of major supermarkets with tofu and won tan wraps. There are also excellent long-life miso pastes that are now sold in squeeze tubes. You are in the Asian aisles of large supermarkets. If you can’t find red miso, feel free to use a different type of miso.
Mirin: Is a sweet Japanese cooking wine and can be found in the international aisle of large supermarkets or in Asian grocery stores.
Tip: The bok choy can be served chopped or, if using baby pak choy, halved or quartered depending on size.
