Blueberry Mojito

These cocktails are perfect for sipping at a party or relaxing on the porch with friends on a warm summer evening. For me, a blueberry mojito is simply summer in a glass.

After living in one of the trendiest cities in the US for a very long time, mojitos have become a favorite almost year-round. But the blueberry mojito puts a twist on the classic drink.

Blueberries have a distinct flavor that starts off sweet but leaves a lingering spiciness. Flavor varies depending on how ripe the berries are, with riper blueberries tending to be sweeter.

But I love the way the sweetness of the blended blueberries balances the zesty citrus of the lime juice in this drink. This recipe is so good it makes it harder to appreciate the drinks being made outside of your kitchen.

Ice cubes are visible in this pink cocktail with blueberries, mint, lime juice and rum.

How to make a blueberry mojito

Start by mixing together the mint, blueberries, and lime juice in a small pitcher or mason jar. Use a pestle (love this one!) to mash the mint and berries into the lime juice.

Then add the simple syrup and rum. Add the ice and stir or shake to mix.

Fill each glass halfway with ice and divide the mojito mixture between them. If you want to remove the mint and berry pieces, pour the drink through a strainer. Top up with lemonade and garnish with mint and blueberries, if you like.

Homemade simple syrup

It’s really easy to make simple syrup yourself. Simply add equal parts water and sugar to a glass and shake until the sugar has dissolved. It only takes a few minutes.

Homemade simple syrup is much thinner than store-bought syrup and mixes easily into cocktails. And it keeps for weeks in the fridge.

You can use bottled lime juice for these mojitos, but I highly recommend cutting fresh limes in half and squeezing them with a hand press for the best flavor. The little extra effort is definitely worth it.
