Fluffy on the inside, crunchy on the outside, these Greek Blueberry Yogurt Waffles are delicious and packed with protein and whole grains.

Summer berry season is upon us and my boys and I couldn’t be more excited. While I love picking all of Michigan’s gorgeous produce, blueberries are probably one of my favorite fruits because they’re so easy to grab and harvest! To help you make better use of those ripe berries, I’m sharing our new favorite breakfast recipe: Greek Blueberry Yogurt Waffles. The perfect way to use freshly picked berries right now, or pop some of those berries in the freezer and make this waffle recipe all year round!
Ingredients
- whole wheat flour: I like to use pastry flour as it makes a lighter, fluffier waffle. But all-purpose flour works too!
- Flaxseed Meal: Flavorless, but adds tons of nutrients like antioxidants and omega-3 fatty acids to the waffle.
- Baking powder: Helps the waffle rise and become fluffy.
- Cinammon: Gives the waffles a natural, warm sweetness.
- Salt: Salt acts as a flavor enhancer for the other ingredients while balancing them out.
- eggs: Eggs act as a binder in this waffle mix and also add protein to the final product.
- Greek yogurt: Thick and creamy Greek yogurt has a higher protein content than regular yogurt.
- Vanilla: Natural sweetness and flavor.
- Seltzer water: The secret is that waffles are fluffy on the inside and crispy on the outside. But you can also use milk if you have some.
- Blueberries: Tart, tangy, and sweet, I usually use frozen blueberries in my waffle mix and serve them with fresh blueberries.
How to make Greek Yogurt Waffles with Blue Berries

Start your blueberry greek yogurt waffles by taking a large bowl and adding the flour.

Next, add the flaxseed flour and cinnamon.

Refine the dry ingredients with baking powder and a pinch of salt.

Mix all dry ingredients together until smooth and make a hole in the middle.

Then crack your large eggs into the hole you made and add the Greek yogurt.

Add some vanilla extract.

Then add the seltzer water and stir until evenly combined.

Gently fold in the blueberries with a wooden spoon or spatula.

Then bake the batter in the preheated waffle iron.

Continue cooking until all the batter is used, then serve with maple syrup and more fresh berries and enjoy your blueberry Greek yogurt waffles!
Switch it
- Swap the berry. While I think blueberries work best, you can use raspberries or strawberries for these waffles as well.
- Make it gluten free. Swap out the flour for your gluten-free flour and these waffles can be enjoyed by everyone!
- Play with the flavors. Blueberry-lemon is a delicious combination, so try adding some lemon zest to give some citrus.

Should waffles be hard or soft?
A classic waffle should be soft on the inside but crispy on the outside; not soggy. But it really comes down to personal preference. Some like them soft, others prefer them crunchy.
Are waffles healthy for you?
Most waffles wouldn’t be considered healthy, but I make mine healthier by using whole wheat flour, no refined sugar, adding flaxseed flour, and using Greek yogurt!
Why isn’t my waffle fluffy?
Make sure you don’t prepare the dough until you’re ready to start baking. Letting the batter rest can cause it to lose air and make your waffles denser.

Blueberry Greek Yogurt Waffles

In a large bowl, mix together the dry ingredients: flour and salt.

Using a wooden spoon, make a small hole in the center of the dry ingredients. Whisk together the eggs, yoghurt and vanilla, then mix with the dry ingredients.

Pour in seltzer water and stir gently until incorporated evenly – lumps are no problem!

Fold in the blueberries with a rubber spatula.

Pour the batter into the preheated waffle iron and bake according to the manufacturer’s instructions until golden brown.
