Preparing this Biscoff Cookie Coffee is so easy! All you need are a handful of simple ingredients, all of which you can find at any grocery store. For the full list of ingredients and detailed instructions, see the recipe card at the end of this post.

- Biscoff spread: Biscoff spread is the main ingredient for the flavor of this Biscoff coffee latte. It’s a spread made from lotus speculaas biscuits. These cookies have a buttery, tangy cinnamon flavor, and Biscoff Spread has the same flavor in a peanut butter-like consistency.
- Almond milk: I used unsweetened almond milk, but you can use your milk of choice. Feel free to use a dairy milk like whole milk or skim milk if you don’t need to save this as a vegan Biscoff Latte recipe. Or, to keep it vegan, you can also use oat milk, coconut milk, or another plant-based milk alternative!
- Espresso shot: A single or double shot of espresso, as you prefer, turns this drink into a real latte. You can also use decaffeinated espresso.
- Crumbled Biscoff Cookie: This topping is optional but so delicious it has a crunchy element in these drinks. It’s a homemade Starbucks style Biscoff Latte!
🔪 Instructions
Mix biscoff spread and milk: In a small saucepan, heat the Biscoff spread and almond milk over medium-high heat, stirring constantly to prevent the spread from sticking and burning.

Heat & Foam: Continue heating until the spread is completely melted. Take off the heat. Froth the milk mixture with a hand blender or hand frother.

Add espresso: Pour an espresso shot into a cup.

Add frothed milk: Pour the hot Biscoff milk mixture into the cup containing the espresso.

Surcharge: Sprinkle with biscuit crumbs, if you like, and serve immediately.

- If you don’t have a milk frother or immersion blender You can add the heated milk mixture and espresso shot to a blender and blend into a frothy, delicious latte. Or, if you have an espresso machine with a milk frother, you can use that too. Simply add milk to the steamer’s jug, place it under the steam nozzle and turn it on. Make sure to hold the pitcher at an angle so the foam doesn’t collect at the top, and when it’s nice and foamy, you’re done!
- Use freshly ground coffee beans For this Lotus Biscoff Latte recipe, use a dark roast coffee for more coffee flavor.
- For best results, Do not boil the milk and Biscoff spread while heating, and be sure to stir the Biscoff milk constantly to avoid burning.
- If you don’t have an espresso machine You can use instant coffee powder, just make it a little stronger than normal.

- Additional toppings: You can garnish your Biscoff Cookie Butter Latte with other toppings like whipped cream, grated coconut, a drizzle of caramel sauce, maple syrup, peanut butter or chocolate sauce, a sprinkling of cinnamon, nutmeg or cardamom, or even a few mini chocolate chips. You can also add 1 tsp brown sugar or coconut sugar for extra sweetness.
- Do it for kids: You can make cookie buttermilk for a sweet treat for kids just by skipping the coffee in this recipe! Follow the first two steps (by frothing the Biscoff milk mixture) and then simply pour into a mug for kids to enjoy.
