It’s something that makes us happy to use ingredients from our own garden. These Chicken Caprese Pasta are a fun way to add caprese to your dinner while packing in the protein from the chicken breasts.

This meal is easy to pair with other veggies, and it’s also a foolproof dinner that anyone can make.

What you need

This caprese pasta recipe calls for simple but fresh ingredients. Here’s what you need.

  • Pasta: Any type of pasta will work. We use penne.
  • Garlic: We recommend fresh garlic, but jars from the jar will work too.
  • salt and pepper: always to taste.
  • tomatoes: While we’re using cherry tomatoes, you can use any type of tomato you like!
  • Fresh basil: Make sure you use fresh basil, not dried.
  • Mozzarella: Feel free to use mini mozzarella balls or cut your own.
  • balsamic vinegar: Balsamic vinegar is a classic Caprese ingredient.
  • White wine: White wine refines the sauce.
  • butter: Butter adds the finishing touch to the flavor.

Quick tips for perfect Caprese pasta

While we post the full recipe below, here are some top tips for perfectly cooked, delicious Chicken Caprese Pasta!

Don’t overcook the chicken

In order not to overcook the chicken, you need to work quickly. Only partially cook the chicken pieces to begin with, as they will simmer in the sauce later.

Reduce the sauce

The delicious balsamic sauce is made primarily from balsamic vinegar and white wine. Be sure to let the sauce simmer so it reduces by half. This intensifies the flavors and thickens the mass quite nicely.

Serve with fresh mozz and basil

It’s important to serve the Chicken Caprese Pasta recipe with FRESH basil and mozzarella. Dried basil is not the way to go.

Customization ideas!

  • Choose your pasta: Do you love regular pasta, pappardelle or angel hair? Use your favorite pasta!
  • Add more veggies: Pack your garden veggies and add your favorite veggies. We recommend summer squash, zucchini or onions.
  • Skip the chicken: Make this pasta vegetarian by omitting the chicken entirely.
  • Use chicken thighs: a dark flesh person? Use chicken thighs instead.

Ingredients

  • 8th oz. penne
  • 2.5 tablespoon olive oil
  • 1.5 Lb. Boneless skinless chicken breast cut into 1-1.5 inch pieces
  • 4 cloves Garlic crushed and chopped
  • 1 teaspoon kosher salt separated
  • 1/4 teaspoon pepper separated
  • 12 oz. cherry tomatoes halved
  • 1.5 tablespoon balsamic vinegar
  • 1/4 Cup dry white wine
  • 2 tablespoon unsalted butter
  • 8th oz. mozzarella balls halved
  • 1 Cup chopped fresh basil

instructions

  • First, fill a large saucepan with water and bring it to a boil over high heat. Add penne pasta and cook until pasta is al dente. Drain the noodles and set aside until later.

  • Heat olive oil in a large Dutch oven over medium/high heat.

  • When the olive oil is fragrant, add the chicken, garlic, 1/4 teaspoon salt, and 1/8 teaspoon pepper to the saucepan and cook for 4-5 minutes.

  • Then, when the chicken is partially cooked, add the cherry tomatoes to the saucepan and cook the tomatoes, chicken, and garlic together until the tomatoes start to stew (about 5 minutes).

  • Add the balsamic vinegar, white wine, butter and the remaining salt and pepper to the saucepan, mix well and allow the liquid to reduce by half (approx. 10 minutes).

  • Remove the sauce from the heat and mix the pasta and mozzarella balls with the sauce.

  • Just before serving, add the basil to the pasta, mix and enjoy.

  • Boneless, skinless chicken thighs can be used in place of chicken breast.
