Barnes & Noble and Just Eggs will introduce vegan breakfast sandwiches at all U.S. locations

JUST Egg announced that Barnes & Noble, the largest bookseller chain in the United States, will introduce its first completely plant-based sandwich, the JUST Eggâ„¢ Breakfast Sandwich, at all B&N Cafes beginning Monday, April 10. During Earth Month, the sandwich will be launched. Available in more than 500 stores in all 50 states, marking the largest US foodservice partnership to date.

Sold for a limited time, the Just Egg Breakfast Sandwich features simply folded eggs, melted Violife smoked provolone and plant-based aioli on a soft ciabatta roll.

Just Egg notes that while B&N Cafes has previously offered other plant-based menu items, the new sandwich offers a significant opportunity to reach new customers who have never tried plant-based eggs while in a comfortable, familiar setting.

The new sandwich is also described as a sustainable choice that helps Barnes & Noble shoppers do good for the planet with one simple purchase. Compared to conventional chicken eggs, Just Eggs says its plant-based eggs use 98% less water, 83% less land and produce 93% less carbon emissions.

Breakfast success

In the past year, Just Eggs has helped introduce entirely plant-based sandwiches to chains like Pete’s Coffee, Caribou Coffee and 7-Eleven Canada.

Adding hundreds of new points of distribution, Just Egg notes, its latest partnership with Barnes & Noble demonstrates its commitment to making plant-based eggs more accessible to all consumers.
