Recipe ingredients for banana oatmeal cookies
The only ingredients you need to make the whole wheat cookies are ripe bananas, oatmeal or quick oatmeal, and regular or mini chocolate chips.
The recipe gives you a lot of customization options. Add a handful of grated coconut, throw in some chopped walnuts, or substitute raisins for the chocolate chips.
These oatmeal banana cookies taste wonderful with a fourth teaspoon each of cinnamon and pure vanilla extract or a drop of almond extract.
I also like to add almond butter or peanut butter because I can’t think of anything better than the combination of peanut butter, banana, and dark chocolate.
You could even use white chocolate chips or vegan peanut butter chips.
Adding an optional sprinkling of salt to the oatmeal banana cookie dough increases the depth of flavor and really brings out the sweetness of these healthy cookies.
Substitutions that I haven’t tried and therefore don’t recommend include swapping out the banana for unsweetened applesauce or canned pumpkin, or using oatmeal.

How to make banana oatmeal cookies
When baking the cookies, preheat the oven to 350 degrees Fahrenheit.
In a large mixing bowl, mash the bananas with a fork. Add oatmeal and optional ingredients and mix into an oatmeal cookie dough.
Refrigerate until firm enough to scoop out the dough with a spoon or cookie scoop.
For no-bake banana cookies, simply freeze the cookies until set. Or, for baked cookies, place the unbaked cookie dough balls on a parchment-lined baking sheet and bake on the middle shelf of the oven for twenty minutes.
Store leftover Banana Oatmeal Cookies in an airtight container in the refrigerator or freezer for optimal freshness. They should keep refrigerated for about four to five days, or frozen for up to three months. Thaw before serving.

However, the soft, chewy, and healthy oatmeal chocolate chip cookies are absolutely delicious on their own. If you love healthy desserts and how energized you feel when you eat them, hopefully you’ll love this easy recipe too.
