Tips and Tricks for Banana Chocolate Chip Muffins

Ripe bananas

Make sure you use ripe bananas for this recipe. If the bananas aren’t ripe, you’ll find that your muffins lack flavor.

Mashed bananas

When mashing the bananas, be sure to use a fork to mash them into small pieces. If you have larger pieces of banana, they can affect the texture of the muffins.

More chocolate chips

Once you have the cupcakes in the tin, you can add extra chocolate chips to add flavor and a nice presentation.

Mix In Chips

Instead of classic chocolate chips, you can swap them for white chocolate chips, caramel chips, peanut butter chips, etc.

Raisins or blueberries

Consider mixing in some raisins or even blueberries for a sweet touch. The dried fruit will rise a bit while baking, making the muffins even fluffier.

I find the nuts add a nice crunch and flavor, but you can leave them out if you prefer. You can also simply replace them with cocoa nibs or something similar.

How can you ripen bananas quickly?

Place the bananas on a baking sheet and bake at 350°F for 8-10 minutes. This will darken the skins and ripen the bananas. Allow them to cool slightly, then peel, mash and blend.

How should these banana muffins be stored?

Storing the muffins in an airtight container or bag in the fridge will extend their shelf life up to 5 days. If you store them at room temperature, they will spoil faster.

Can you freeze these banana muffins?

Go ahead and freeze the cupcakes for 2-3 months. Just let them cool completely before putting them in a suitable container and freezing them. When you’re ready to eat them again, thaw them on the counter or reheat them in the microwave.

Instructions

  • Preheat oven to 375°F. Grease a muffin tin or line it with papers.

  • In a bowl, combine the flour, sugar, cinnamon, baking powder, baking soda and salt.

  • Peel the bananas and put them in a separate bowl. Use a fork to mash them. You should have about 1 ⅓ cup of mashed bananas.

  • Add the egg, butter and vanilla to the bowl with the bananas. Mix until well combined.

  • Stir in the chocolate chips and nuts if using.

  • Pour the muffin batter into the muffin tins, filling each one about ⅔ full.

  • Bake for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

notes

  • After pouring the batter into the muffin tins, you can add some extra chocolate chips for decoration, if you like.
  • Chocolate chips can be swapped out for caramel chips, white chocolate chips, or even raisins for a whole new recipe!
  • Your bananas should be very ripe for this recipe! If the bananas are not ripe enough, you can soften them in the oven. Peel the bananas and bake them on a baking sheet for 8-10 minutes at 350°F. This will “ripen” them so they are easier to grind.
  • Store muffins for up to a week in an airtight container or freeze for up to 3 months.
